Ever since we got our air fryer, we are pretty obsessed with coming up with recipes to use in it. We are fascinated by how fast it perfectly fries our food and how healthy it makes our tasty concoctions. Rather than drenching the food in oil, our air fryer basically fries (probably) anything using hot air. I really am not perfectly sure how it does it, but let me tell you, it is the greatest cooking gadget we own! After we place the food in the frying basket and press a few buttons, we walk away and let the fryer do the all the amazing work. Even though we have not tried it yet, we know that our air fryer can cook anything from hamburgers to a cake. We love the versatility and how we can use it to cook so many different things. Something we knew that we wanted to make first was coconut shrimp. When brainstorming ideas, we came up with this fantastic spicy mango coconut shrimp bowl.




When we started to make the coconut shrimp, we were blown away by how simple it really was. Coconut shrimp seems like something that could take an afternoon to make. Instead, it took less that twenty minutes! While the air fryer made this dish incredibly easy, it can also be made using an oven, and the cook time is just as short! Never before did we think we could have perfect, coconut shrimp so quickly, and we were happily amazed.




Not only did the tasty shrimp astonish us, but we were also pretty shocked by the incredible and spicy mango sauce. It was perfectly sweet and perfectly spicy all at once and it perfectly accompanied the crispy shrimp. This sauce was so good that we wanted to put it on everything! Since we made the shrimp, we have even put the sauce on some enchiladas that will be gracing the blog very soon.







Although this spicy mango coconut shrimp bowl seems complicated, it is so simple and so fast and would be a perfect, tasty weeknight meal. After a few minutes of prep in the kitchen, this beautiful dish can be the greatest thing to eat after a long day at work. Whether or not you own an air fryer, this meal is something you have to try! Spicy Mango Coconut Shrimp Bowl

Spicy Mango Coconut Shrimp Bowl

Ingredients

  • 1 pound Shrimp, peeled and deveined
  • 1/2 cup Egg Whites
  • 1/2 cup Flour
  • 1/2 cup Coconut, unsweetened and dried
  • 1/2 cup Panko
  • 1 tablespoon Salt
  • For the Sauce
  • 1 Mango, chopped
  • 1/4 cup Cilantro, chopped
  • 1/4 cup Red Onion, chopped
  • 1 1/2 teaspoons Sriracha
  • 3 tablespoons Coconut Milk
  • For the Bowl
  • 1 cup Basmati Rice
  • 1 1/2 cups Water
  • 1 Avocado, sliced
  • Cliantro for Garnish
  • Red Pepper Flakes for Garnish

Instructions

  1. Clean the shrimp and set aside. In a medium bowl, add the egg whites. In another bowl, mix the flour, coconut, panko and salt. Mix thoroughly.
  2. One by one, dip the shrimp in the egg whites and then into the coconut mixture. Place on a greased baking sheet or a plate.
  3. If baking, preheat the oven to 400 degrees. If using an Air Fryer, set it to 350. In the oven, bake the shrimp for 15 minutes and flip the shrimp half way through. In the air fryer, cook for 10 minutes.
  4. For the Sauce
  5. In a food processor, add the mango, cilantro, red onion, sriracha and coconut milk. Blend until smooth. Add more coconut milk depending on preferred consistency.
  6. For the Bowl
  7. Cook the rice with the water on the stovetop. When cooked and fluffy, add it to a bowl. Garnish each bowl with rice, coconut shrimp, mango sauce, avocado, cilantro and red pepper flakes. Enjoy!
