In an effort to eat healthier, Dan and I started experimenting with using more vegetables in our cooking. With every meal, we tend to navigate towards the same veggies. Over and over, we love using zucchini, broccoli, tomatoes and spinach. However, when we decided to go out of our comfort zone and tried cooking spaghetti squash, we were in for a real treat. This Spaghetti Squash Bolognese was an incredibly fresh and flavorful dish that was so simple and super satisfying. We loved how it was so quick and tasted amazing even though a vegetable replaced our coveted pasta. This flavorful swap was great for limiting our carbs and also for giving us more nutrients. Our decision to use spaghetti squash instead of pasta, was definitely a tasty one!




Spaghetti Squash Bolognese




Last week, Dan and I were so great about working out. On nights when we did not go to the gym, we took walks in the park around the corner from our home. It has been so convenient living directly next to a park. After dinner, we enjoy walking with one another and talking about all of the highlights of our day. This new addition to our nights has been so fun and has also been great for a healthier lifestyle. It gives us a change of pace of our usual television binging after we eat. Of course, we still enjoy watching too many episodes of a show on Netflix, but we also have loved this new tradition of walking and taking outside.




Spaghetti Squash Bolognese




When I was younger, I remember loving taking walks with my family before the sun set. Of course, living in the country, we were never able to walk on the side walk or in a park. Instead, it was usually a stroll on the levee or through the walnut orchard. I remember it being so peaceful outside and enjoyable to tell my family about all that happened at school. As I continue this tradition with Dan but in our own way, I am remembering why I love going on walks so much. This not only is a great pastime for a healthier lifestyle, but it also is a great way to connect with Dan at the end of the day.

This spaghetti squash bolognese is a super simple and super tasty meal that everyone at your table will love. With the lightness of the spaghetti squash and the deliciousness of the bolognese, everyone will be begging for more. We know we will enjoying it this fall again and again.

Spaghetti Squash Bolognese

Spaghetti Squash Bolognese

Ingredients

  • 1 Spaghetti Squash, cut in half lengthwise, seeds removed
  • 1/4 cup Olive Oil, separated
  • Salt and Pepper
  • 2 tablespoons Garlic, minced
  • 1 Carrot, peeled and chopped
  • 1 Onion, chopped
  • 1 Celery stalk, chopped
  • 1 1/2 pounds Ground Beef (ground turkey or pork would also work well)
  • 1/4 cup Tomato Paste
  • 2 cups Crushed San Marzano Tomatoes
  • Parmesan Cheese, grated
  • 1/4 cup Fresh Basil, chopped

Instructions

  1. Preheat oven to 400 degrees.
  2. Drizzle the spaghetti squash halves with 2 tablespoons of olive oil, salt and pepper. Turn the squash halves over onto a baking sheet and bake for about 45 minutes to an hour. Once cooked, flip over and use a fork to grate across the squash. Set aside.
  3. In a large pot, add 2 tablespoons of olive oil, garlic, carrot, onion and celery on medium heat. Cook until onions are soft and translucent.
  4. In a skillet, brown the ground beef for about 10 minutes. Drain the fat and add to the pot.
  5. After stirring the beef into the cooking vegetables, add the tomato paste. Cook for about 3 minutes.
  6. Add the tomatoes and bring the mixture to a boil. Once it boils, bring it down to low. Cook uncovered for about 20 minutes.
  7. Pour the bolognese over the spaghetti squash and top with Parmesan and basil. Enjoy!
