This soup is probably one of our happiest kitchen accidents that we have ever had. After our last incredible slow cooker recipe, I got the crockpot out to make another mouthwatering dish. Excitedly, I pulled out tomatoes, wine, garlic… and one sorry looking tri-tip. As I put the aging slab of meat on our countertop, complete disappointment rushed through me. I was convinced that the crockpot could make the meat less spoiled. However, Dan assured me that while our crockpot is amazing, it is not a miracle worker. A bit crushed to see this delicious meal not simmer in my new favorite device, I became determined to top my original idea. Even though I probably looked like a deranged cartoon character rummaging through our fridge and pantry, I was so focused on making something delicious to make up for my spoiled meat. After some frantic searching, this incredible slow cooker broccoli soup was deliciously born!

When life gives you frozen broccoli, milk and an amazing amount of cheese in your fridge, you make broccoli soup. This slow cooker broccoli soup was one of those meals that I was immensely proud to serve and show off to Dan. After my tri-tip malfunction, I was so eager to make something fantastic out of almost nothing. Determined to still use the crockpot, I was desperate to find anything that made sense together. Once I took a bite of this amazing dish, I knew that all of the ingredients completely made delicious sense together.

Slow Cooker Broccoli Soup

Ingredients

  • 4 cups Broccoli, chopped or frozen
  • 1 onion, chopped
  • 1/2 cup Reduced Fat Cream Cheese
  • 2 tablespoons Garlic, minced
  • 2 cups Chicken Broth
  • 4 strips Bacon
  • Dried Parsley for garnish
  • 1 cup Whole Milk
  • 1 cup Sharp Cheddar Cheese, shredded
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions

  1. In a crockpot, add the broccoli, onion, cream cheese, garlic and chicken broth. Turn the heat to high, stir the ingredients, cover and cook for 2 hours.
  2. While the slow cooker is cooking, add bacon and cook until brown and crispy, about 6-8 minutes. Transfer bacon to a paper towel-lined plate. Set aside.
  3. After 2 hours of cooking, stir in the milk. Using an immersion blender, puree the soup but do not over puree. Leave some smaller chunks of broccoli in the soup.
  4. Stir in the cheese, salt and pepper. Garnish with bacon, cheese and parsley. Enjoy!
