The New Year is about to transpire and I am enjoying it on my couch. Since I am sick, Dan and I made a homemade, scrumptious meal and are enjoying a movie or three on the couch. Obviously, I am writing instead of watching the movie at the moment, so almost certainly an action film is on. However, I am too eager to get this delicious meal and share it on our blog. After spending the entire day together, we have enjoyed spending this holiday reflecting and dreaming. It has been a year full of many highs and some big lows. Nevertheless, we are so appreciative of the lives and the many blessings we have. Most of all, we have loved this blogging adventure we are on. It has been the biggest highlight of our year. It has been such a reward to cook and learn together in this new, thrilling process.

To kick off this New Year, we have prepared a dish that will reflect the kind of foods we will be focusing on in 2017. In an effort to eat more clean and nutritiously, we will be overflowing our meals with flavorful vegetables. Our hope is to become more inventive in making dishes that highlight the deliciousness of vegetables. Additionally, we want to emphasize how easy it is to eat more healthily. In return, we hope to gain a lifestyle that gives us more energy and greater health. We can’t wait to make more meals that are rich in flavor and nutrients.

These skillet zoodles with cream sauce were something that completely made us rethink how we are eating. The minute we both took a bite of these zucchini noodles, we declared that they are so amazingly delicious. Replacing noodles with zucchini was beyond easy and was more fun than eating pasta. This dish literally changed the way we think about food and got us excited for highlighting more vegetables in our daily dinners.

Skillet Zoodles with Cream Sauce

Skillet Zoodles with Cream Sauce

Ingredients

  • 5 Zucchinis, spiralized
  • Olive Oil
  • Salt and Pepper
  • 1 cup Pancetta, diced
  • 1 cup Tomato Sauce
  • 1/4 cup Heavy Cream
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Burrata Cheese
  • 4 sprigs of Basil, chopped

Instructions

  1. After spirlaizing the zucchini, place it in a large skillet with oil. Cook for about 10-15 minutes or until tender. Season with salt and pepper.
  2. In a separate skillet, fry the pancetta. Cook until brown and crispy. Set aside.
  3. In a small saucepan, mix the tomato sauce with the heavy cream. Season and drizzle over the zucchini noodles.
  4. Top the zoodles with tomatoes, burrata and basil. Enjoy!
