Sometimes an amazing dish comes together and fills you with incredible comfort. With any tasty comfort dish, meals that load you with warmth, delicious tastes and enjoyment are usually the most coveted foods. After making and consuming this skillet tamale pie, I was so amazed that it quickly became one of my new, favorite comfort dishes. Whether it was the enchilada sauce or the scrumptious cornbread, this one pan wonder had me so completely happy and surprised.

This was my first time having tamale pie. It was also Dan’s first time trying this incredible dish too. As we slowly enjoyed every tasty bite, we were so astonished that we had never eaten it before. Although it was our first time devouring it, it quickly became one of our favorite comfort foods. We loved eating it so much that we know we will make it again and again.

Of course, we are so thankful for this rain. However, the only thing to improve these cold days is to embrace it with delicious meals that warm us up. This one was so perfect for a rainy day and made us so cozy. The next time it rains, we will surely be whipping up this awesome tamale pie.

Skillet Tamale Pie

With amazing spice and flavors, this skillet tamale pie is so delicious! It is the perfect cold day comfort food!

Ingredients

  • 1 box JIFFY Corn Muffin Mix
  • 1/4 cup Milk
  • 1 Egg
  • 1 pound Ground Turkey
  • 1/2 cup Red Enchilada Sauce
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cumin
  • Salt and Pepper
  • 1 cup Cheddar cheese, shredded
  • 1/2 cup Mozzarella Cheese, shredded
  • 1/4 cup Feta Cheese
  • 1/4 cup Pomegranate Seeds
  • 1/4 cup Cilantro, chopped

Instructions

  1. Preheat the oven to 400 degrees. In a large bowl, mix the corn muffin mix, milk and egg. Place in a skillet or pan than go into the oven. Bake for 20 minutes. Set aside.
  2. In a separate pan, cook the turkey. Cook fully until no longer pink. Add the onion and cook until translucent. Pour in the enchilada sauce, garlic, cumin and salt and pepper on medium low heat. Stir for about three minutes and add the cheddar and mozzarella cheese.
  3. Poke holes in the cornbread with a fork. Pour the turkey and cheese mixture over the cornbread. Top with feta, pomegranates and cilantro. Enjoy!
