This week, I have concentrated a lot on my two New Years resolutions. The first one was to eat healthier. Over the last few days I have planned some nutritious, tasty meals for the next few weeks that will help me to fulfill this plan. Even though it is just the third day of the month, I want to get a head start on my planning healthy meals before I go back to work next week. My other goal has to become more organized. Today I cleaned our closets, organized the pantry and put away Christmas. During all of that work, I was in great need of something sweet and tasty that would fuel me. While cleaning the pantry, I found some gems that would help me to create a nutritious and amazing snack. With the help of an incredible sesame spread, we created these delicious sesame energy bites.

Sesame Energy Bites

Prep Time: 10 minutes

Total Time: 1 hour, 10 minutes

Yield: Makes about 12 bites

Sesame Energy Bites

These delicious energy bites are made with tasty Simply Sesame Paste. They are so incredibly easy to make and no cooking is required!

Ingredients

  • 1 1/2 cups Rolled Oats
  • 1/4 cup Honey
  • 1/2 cup Simply Sesame Spread Pure Roasted Sesame
  • 1/4 cup Coconut Shavings
  • 1/4 cup Dried Blueberries
  • 1/4 cup Mini Chocolate Chips
  • 2 teaspoons Vanilla

Instructions

  1. In a mixing bowl, add the rolled oats and honey. Stir thoroughly.
  2. Pour in the Simply Sesame, Pure Roasted Sesame Spread. Mix well.
  3. Add the coconut shavings, dried blueberries, chocolate chips and vanilla.
  4. Mix with hands into small, bite-sized balls. Place on parchment paper and place in refrigerator for one hour. Enjoy!

Notes

Refrigerating the bites helps them to settle, but they can be devoured right away if you are needing them fast and on the go.
