We are back after a whole month away from blogging! We have missed cooking every night and getting creative with writing and taking photos. This dish we are showing first could become one of my new, favorite go-to meals, due to the connivence, flavor and unique combination of ingredients. With zesty Mexican flavors and a classic pasta base, this Salsa Verde Penne Pasta could definitely win you over too. We love how our favorite ingredients of enchilada sauce, rotisserie chicken and pasta blended together beautifully. Mexican pasta is an unexpected combination, but somehow it just so deliciously worked. Part of the reason why we took some time off recently, is because we have been trying different foods lately. These meals are not very photogenic, so we have not yet turned them into recipes for this blog. Once we experiment with how to best showcase these ingredients and turn them into pretty meals, we will show you the delicious foods we have been devouring.

We love how we feel with these changes and are having fun trying to make meals out of these wholesome and delicious ingredients. Although this pasta does not fit into what we have been eating lately, it is still incredible, filling and so fun. We know that it is something fast that families can make on a whim and everyone will love eating every bite. We also know that everyone will have some of the ingredients already on hand in the pantry. That makes it an even bigger win! Salsa Verde Penne Pasta

Ingredients

  • 1 box Penne Pasta
  • 1 1/2 cups Green Enchilada Sauce
  • 1 can Diced Tomatoes
  • 1 can Diced Chiles
  • 1 cup Cheddar Cheese, Shredded
  • Salt and Pepper
  • Cilantro for Garnish

Instructions

  1. Boil pasta according to package directions. When finished cooking, transfer pasta to a large skillet. Pour in enchilada sauce, diced tomatoes and chilies. Stir until the sauce is warm, for about 6-7 minutes. Add cheese on top and wait until it is melted. Season with salt and pepper and garnish with cilantro. Enjoy!
