Topped with perfectly seared salmon, piled with fresh veggies and smothered in an incredible sauce, these salmon rice bowls are a healthy and irresistible dinner! In a few minutes and with few steps, these wonderful and fresh bowls can be enjoyed and savored for a perfect meal.

Dan and I love a good and healthy bowl, and when salmon is a part of it, we are perfectly satisfied. When we made these salmon rice bowls, we were so amazed by the outcome! It was definitely a meal that was a group effort. Dan handled the salmon and rice, and I took on the sauce and veggies. In no time, this scrumptious rice bowl was ready for us to devour! I was so impressed with how the salmon turned out on the stovetop in a skillet, and realized that cooking it this way is a speedy and delicious game changer. Of course, I was also very excited by the sauce – one of our favorite staples to enjoy with bowls. With all of our efforts put together, these incredible salmon rice bowls were born. Besides the amazing salmon on top, one of my favorite things about this rice bowl is the mouth watering and creamy sauce. I will admit that this sauce was recreated from one of my favorite places to eat in college. Dan and I met my freshman year of college at Chico State. One of our favorite dates was to visit a place that made fun and inventive teas. Tea Bar was our go-to place for a refreshing drink but also for lunch or dinner. Our staple at tea bar was to get a rice bowl with a choice of meat and plenty of creamy teriyaki  sauce on the side. When we both left Chico, we would constantly crave these bowls and that addicting sauce. The minute I recreated it at home for our zoodle rice bowls, my life was changed! It is now the sauce we love to make and reminisce about the good old days in college.

If you want a dinner that is healthy, fun and delicious, then this is it! Admittedly, it seems difficult to make at first. However, it really is a fast and really simple dish! If you have a helper in the kitchen like I did, it will be ready so quickly! Make this ahead of time for a tasty lunch or enjoy it as a fast, weeknight dinner. You will love every simple and fresh bite!

Salmon Rice Bowl

Salmon Rice Bowl

Ingredients

  • 2 tablespoons Honey
  • 3 tablespoons Soy Sauce
  • 1/2 Fresh Lemon, squeezed
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Water
  • 1 tablespoon Olive Oil
  • 1 pound Salmon
  • 1 cups Rice
  • 2 cups Water
  • 1 Green Onion, chopped
  • 2 Radishes, chopped
  • 1 cup Frozen Edamame, cooked
  • 1 Green Onion, chopped
  • Sesame Seeds
  • Salt and Pepper
  • For the Sauce
  • 3 tablespoons Mayo
  • 1 1/2 teaspoons Soy Sauce
  • 1/2 teaspoon White Vinegar
  • 1/4 teaspoon Garlic, minced
  • 1/4 teaspoon Ginger, minced
  • 1/4 teaspoon Lemon Juice
  • 1/4 teaspoon Sugar

Instructions

  1. In a small bowl, mix the honey, soy sauce, lemon juice, dijon mustard and water. In a skillet over medium heat, add the oil and place the salmon skin side down. While cooking, pour half of the mixture on top of the salmon. Cook for 6-8 minutes. Once the salmon is flipped, pour the other half of the mixture in and cook for another 6-8 minutes. Remove from the heat, remove the skin and set aside.
  2. Boil two cups of water, pour in the rice, reduce the heat and cover. When fully cooked, fluff with a fork and set aside.
  3. Assemble the bowl by adding the rice and topping with the carrots, radishes, edamame, green onions and salmon, garnish with sesame seed and season with salt and pepper.
  4. For the sauce, mix the mayo, soy sauce, white vinegar, garlic, ginger, lemon and sugar.
  5. Pour sauce evenly over the bowls. Enjoy!
