Every once in a while, I love making a mess in the kitchen. When I made these rainbow stir fry zoodles, boy did my kitchen look like a disaster! Zucchini was on the backsplash, bell pepper was on the light switch, and carrots were all over my shirt. Although my kitchen looked as if vegetables attacked, it was so fun to get into cooking such a healthy and delicious dish! I loved how this meal was completely simple but made my kitchen a fresh and messy delight. It was such a joy to cook something so exciting that it painted my tile and floors.

To be completely honest, my mess was caused mostly because of my weak muscles. Even though our spiralizer is pretty fool proof, I had such a hard time making the vegetables into noodles. When Dan uses our spiralizer, it is so effortless for him to turn vegetables into fresh, tasty noodles. However when I try it on my own, the vegetables start flying and the shreds go completely everywhere. Even though I wish my weak muscles would help me to make noodles faster, I have so much fun pretending that I am strong and totally able to not make a mess.

My favorite thing about this dish is that it is super simple and bursting with flavor. Although I have troubles making veggies into noodles, anyone with any kind of strength should have no issue. After simply spiralizing the produce, the sauce and toppings are quickly and effortlessly added. In no time, a delicious and incredible dinner is ready to be devoured. I love how every bite tasted so perfectly cooked and coated with an amazing, juicy sauce. We enjoyed every aspect of this meal and enjoyed gobbling it down so quickly.

It has been so great eating healthier lately. Every time we substitute ingredients and come up with ideas to make our food more nutritious, I feel more proud of our tasty outcomes. I also have more fun devouring every bit of it. Finding ways to make our favorite foods healthy has been an inviting challenge. We cannot wait to transform more meals into healthy masterpieces. A change of just one ingredient can make an amazing difference. This meal would be amazing for families or for a simple dinner for two. Rainbow Stir Fry Zoodles

Ingredients

  • 3 Zucchini, Spiralized
  • 2 Yellow Squash, Spiralized
  • 2 Carrots, Spiralized
  • 1 Red Bell Pepper, Spiralized
  • 1 cup Peanuts, crushed
  • 1/2 cup Sesame Seeds
  • 1/4 cup Olive Oil
  • 1/4 cup low-sodium Soy Sauce
  • 2 tablespoons Fresh Ginger, minced
  • 2 tablespoons Honey
  • 1 tablespoon Sesame Oil
  • 2 cloves Garlic, minced
  • Juice of 1 lime

Instructions

  1. After spiralizing vegetables, add them to a skillet with olive oil. Cook on medium heat, stirring every few minutes.
  2. While vegetables are cooking, mix the sauce in a medium bowl. Add all ingredients and stir until well blended. Pour on top of cooking vegetables.
  3. Cook vegetables for about 10 minutes or until they appear soft. Top with peanuts and sesame seeds. Enjoy!
