We love sliders and these could be our new favorite for the holidays! These pork tenderloin sliders are so delicious and will be everyone’s go to appetizer. Whether you make them as a holiday appetizer or for a starter for the big game, this delicious slider will simply wow everyone. When Dan made these for us, I was completely amazed by all of the incredible flavors. With a cranberry spread, a crispy tenderloin inside and a tasty whole wheat bun, these pork sliders are simply delicious. We loved how every bite was flavorful and crispy and embodied everything we completely love about the holidays.

We made these sliders as part of our football game food appetizers. Each week we put two dishes head to head and battle them as football starters. We have had so much fun researching each team and discovering what we should create to represent each city. For this week, we highlighted the Indianapolis Colts. When I started to look into this team, I paused and was bit unsure of what to do for the Colts. Seven years ago, I spent an entire summer living in Indiana and was just an hour away from the capitol.

My summer in Indiana was quite memorable. I was a part of an organization that used music to communicate the gospel to others. While I traveled around Indiana and surrounding areas, I also was able to discover amazing foods and flavors. One thing that I remember trying and would only definitely try in Indiana was a pork tenderloin sandwich. This sandwich is very distinct to this area and is something that everyone should totally try!

When I bit into these juicy and delicious pork tenderloin sandwiches, I was so amazed by all of the holiday flavors. Serve these pork tenderloin sliders for a game or for a holiday appetizer and your guests will certainly be begging for more. Pork Tenderloin Sliders

Pork Tenderloin Sliders

Ingredients

  • 1 pound Pork Tenderloin
  • 1 Egg
  • 1/3 cup Panko Bread Crumbs
  • 6 Slider Whole Wheat Buns
  • 1 1/2 cups Cranberries
  • 1/2 cup Water
  • 1/4 cup Sugar
  • 1/4 cup Arugula
  • 2 tablespoons Mayonaise

Instructions

  1. Cut the pork into 1 inch slices. Beat one egg and place into a medium sized bowl. Dip the pork slices into the egg mixture and then into a bowl of panko bred crumbs. Repeat until all pieces of pork are breaded.
  2. On medium heat, sear each piece of pork for 4 minutes on each side. Sear until the breadcrumbs are golden brown. Check for meat doneness and set aside.
  3. In a small saucepan, heat water until boiling. Add in the cranberries and mash with a potato masher. Stir in sugar. Cook until thick.
  4. Toast buns and spread cranberry mixture and mayonnaise over each bun. Place pork tenderloin slice and arugula in each bun. Enjoy!
