If you follow Love and Risotto, you know that Allie and I are all about cooking meals and putting our own unique twist on them. Whether it is introducing an ingredient that seems bold or out there, we are all about trying new experiences. This week was no exception when we created a Pomegranate Chicken dish! The tartness from the pomegranates presented a pleasant surprise similar to how the almonds did when we created a pesto sauce instead of using the traditional pine nuts. Pomegranate Chicken

When we create recipes, we always try to keep the word “fun” in mind. Also, the more color to a dish, the better! In this chicken dish we added the red little jewels found inside the pomegranate called, arils. We love eating pomegranates, so we were definitely eager to try using it in a meal. Pomegranates are extremely healthy because they are packed with antioxidants, vitamin C, potassium, and fiber! Along with the arils, we decided to add avocado to this dish. Avocado is another healthy choice packed with potassium, fiber, vitamin E, and contain very little fat!




Pomegranate Chicken

We baked this chicken in the oven, and added the arils and avocado during the plating to show off their beautiful ruby color. The look of this dish is so beautiful and the rich colors are so captivating. With the avocados and pomegranate, the colors are extremely vibrant and inviting. Additionally, the avocados add a unique flavor that balances the tartness of the pomegranates. The goat cheese does this beautifully as well and adds another layer of incredible tastes. Although we are big on flavor in this house, sometimes having a gorgeous looking meal that is also delicious is just as exciting.




Pomegranate Chicken

Due to the vibrancy of this dish, it would be fun to serve to others. However, it is so simple that it can be quickly created on a weeknight in just a few minutes. This dish is incredibly easy. Once the chicken is cooked, the rest of the ingredients are simply placed on top of the chicken, allowing for extreme ease. It would be a quick game changer in our house if we made this on a regular basis. We hope you try this dish and get amazed by its beauty, unique taste and simplicity. Enjoy!

Pomegranate Chicken

Ingredients

  • 4-6 Chicken Breasts
  • 1 Cup Balsamic Vinegar Dressing
  • 1/2 Cup Pomegranate Juice
  • 1 Avocado, chopped
  • 1/4 Cup Pomegranate Arils
  • 1/4 Cup Goat Cheese Crumbles

Instructions

  1. Preheat the oven to 375 degrees. Place chicken breasts in a baking dish and pour vinegar and juice over the breasts. Cook for 30 minutes or until fully cooked. Top the chicken with avocado, pomegranate arils and goat cheese. Enjoy!
