Recently, we discovered the amazing versatility and taste of frozen pierogi. We do not cook with frozen food a lot, but when we do, it is because we want a delicious meal in minutes. On a busy weeknight, frozen pierogis are essential. After using them in a creamy pesto dish, we realized how amazingly tasty they are. To me, pierogis are improved ravioli. I love raviolis, but after consuming too many frozen raviolis in college, they started to taste like I was in an uninspired, hurried meal before class. When Dan and I replaced raviolis with pierogis, a flavorful creation was deliciously born. We have been enjoying skillet pierogis for the past few weeks, but this last time, we added our creamy lemon sauce to the skillet. This fantastic combination had me wanting to eat the entire skillet! This pierogi creamy lemon skillet was so fresh, zesty and fun! Every bite was a healthy and flavorful delight!

We loved how the lemon sauce mixed with the pierogies and how the broccoli gave it a fresh and flavorful taste. Best of all, this meal was done in no time and tasted as if we were slaving away for hours. Who knew something so delicious could be found in the freezer isle?

Pierogi Creamy Lemon Skillet

Pierogi Creamy Lemon Skillet

Ingredients

    For the Skillet
  • 1 1/2 cups Broccoli, steamed
  • 1/4 cup Frozen Peas
  • 1 Container Pierogies, frozen
  • Olive Oil
  • For the Lemon Sauce
  • 4 tablespoons Butter
  • 1 cup Heavy Cream
  • Juice from 1 Lemon, squeezed
  • 1 tablespoon Garlic, minced
  • Salt and Pepper
  • 2 tablespoon Flour
  • 1/4 cup Parsley, chopped

Instructions

  1. Cook pierogies according to package instructions. When finished, place in skillet with olive oil on medium low and sear both sides of each pierogi.
  2. In a large sauce pan on medium heat, add the butter, heavy cream, lemon juice and garlic. Add salt and pepper to taste. Mix on stovetop for 2 minutes.
  3. Whisk in flour for 2 minutes until smooth. Stir in parsley and remove from heat.
  4. Add the lemon sauce, steamed broccoli and peas to the skillet with the pierogies. Cook for three more minutes on medium heat. Serve and enjoy!
