Baking is something Allie and I are not completely self-assured with. We love eating sweets, but making them from scratch makes us a little weary. This apprehension comes from many a baking disaster. Whether it is melted cookies or rock-hard brownies, we have not had the greatest success when it comes to baking in the kitchen. However, with recent attempts, we have become a little more successful. While there have been a few bumps throughout our baking journey, this practice has made us a bit more confident while making sweets. This recipe for panna cotta berry pie is so simple, that we accomplished it with absolutely no difficulties. It was so exciting to see a dessert come out to perfection for the first time in a long time! Not only was this dessert completely delicious, but it will also be an ideal treat to serve while celebrating the Fourth of July.

The Fourth of July is one of our favorite holidays. We have celebrated it together almost every year of our relationship, and it has always been paired with amazing memories. We have celebrated in a different place every year, but there is something so magical and fun about this exciting summer holiday, wherever we may be. Maybe the magic comes from the nostalgia of celebrating summer while school is out, or the fun of watching a beautiful show in the night sky. Whatever the case may be, this holiday is one that we absolutely enjoy together every year. One of the greatest joys of the Fourth of July is devouring barbequed food and savoring inventive, festive desserts. Ingredients

  • ½ ounces, weight Unflavored Powdered Gelatin
  • 3 cups Water, Divided
  • 3 cups Heavy Cream
  • 2 Tablespoons Vanilla Extract
  • ¼ cup Sugar
  • 1 package Pie Dough (14 Oz.)
  • 1 cup Fresh Berries
  • 2 Tablespoons Powdered Sugar

Instructions

  1. To prepare the gelatin, place one cup of lukewarm water in a bowl. Pour two cups water in a medium saucepan on medium high heat. Pour the remaining water in a bowl and add the gelatin. Let stand for one minute. When water becomes hot, pour gelatin and water mixture in the saucepan and stir for five minutes.
  2. After gelatin has dissolved, add the heavy cream, vanilla and sugar. Stir for 3 minutes. When all ingredients are mixed and heated, pour into a bowl. Refrigerate for about 3 hours or until the mixture has hardened.
  3. While gelatin is being refrigerated, preheat the oven to 375 degrees. Divide pie dough into small tins. Bake for 10 minutes. When panna cotta is set, pour into pie crusts. Top with fresh berries and powdered sugar.
