I know I write this every time we make sweets for the blog, but I am absolutely horrible at baking! I am talking make an explosion in the kitchen with sugar and flour flying in the air kind of horrible. Due to my baking horribleness, it is a guarantee that if I put a sweet treat on our blog, it is sure to be a simple task. Basically, if I can pull it off, anyone can. Before making these Oreo stuffed cookies  for Valentine’s Day, I tried to make two other heart themed desserts. Let’s just say that there were some tears and two batters that led to inedible disasters. For a moment while I made these fun stuffed cookies, I thought that they were also destined for failure. However, after some cutting and deep breaths, these festive beauties came out both cute and tasty.

These Oreo stuffed cookies  would be the sweetest treat for a Valentine’s Day gathering or class party. If a student brought these into my classroom to share with the other kids, I would be the happiest teacher! They were so fun and festive and had so many great flavors. Given that an Oreo cookie was hidden underneath the sugar cookie goodness, it would be the best surprise to get these in a classroom. I loved how they looked so exciting to bite into. Any child would be so thrilled to dig into these festive delights. The minute I finally bit in, I was incredibly pleased by their great, sweet flavor!

My overall favorite thing about these cookies is that I was able to pull them off. If I was able to tackle this feat, then simply any person can. When they first came out of the oven, I was convinced that I failed at baking once again. However, I was able to cut the cookies into circles to make them look just perfect! Once they are complete, they will look like cookie raviolis. All that you have to do to make it into a perfectly round cookie is cut around it and remove the Oreo portion from the outer cookie. After that, all that is necessary is to chow down!

Oreo Stuffed Cookies

Ingredients

  • 2 3/4 cups Flour
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 stick of Butter, melted
  • 1 Egg
  • 2 teaspoons Vanilla
  • 1 1/2 cups Sugar
  • 1 box Oreo Cookies (we used Red Velvet Oreos)
  • Sprinkles

Instructions

  1. Preheat oven to 375 degrees. In a large bowl, add the flour, baking powder and baking soda. In a separate large bowl, mix the butter and sugar together until it becomes smooth in texture. Add the egg and vanilla to the same bowl and beat the egg.
  2. Slowly add the dry ingredients to the wet ingredients. Mix until dough is softened. Roll out the dough using a rolling pin and a floured surface. Cut out circles from the dough using a cookie cutter (the opening of a glass could also work) and place spread apart on a greased cookie sheet.
  3. Wrap the dough completely around the Oreo, tightly covering every single side and making sure that the Oreo is not visible. Top with sprinkles and place on greased baking sheet.
  4. Bake for 8 to 10 minutes. When they are finished, let them cool. They will look like raviolis and will need to be cut. After they are cool, cut around them in a perfect circle. Enjoy!
