With fresh mozzarella, creamy balsamic dressing and grilled chicken, this delicious open faced orange chicken sandwich is the perfect healthy meal.

Our first recipe featuring oranges is finally here! We planned to highlight this awesome food all month, but got a bit busy with our jobs. We already have made and eaten these tasty recipes, and we cannot wait to show them to you! With fresh mozzarella, creamy balsamic dressing and grilled chicken, this delicious open faced orange chicken sandwich is the perfect healthy meal. We loved the addition of oranges on this tasty sandwich and the zest of the creamy balsamic. We also loved how this sandwich meets all of the goals  of our blog for this year.

Open Faced Orange Chicken Sandwich

Open Faced Orange Chicken Sandwich

Ingredients

  • 2 Grilled Chicken Breasts (found in the deli)
  • 1 loaf Ciabatta Bread, sliced in half
  • 4 slices Fresh Mozzarella
  • 1 Avocado, sliced
  • 1 Orange, sliced
  • 1/2 a Red Onion, sliced
  • 1/4 cup Arugula
  • For the Dressing
  • 1/4 cup Balsamic Vinegar
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Honey
  • 3 tablespoons Plain Yogurt
  • 1/2 tablespoon Olive Oil
  • 1 tablespoon Mayonaise

Instructions

  1. Place the Mozzarella cheese on top of the ciabatta bread followed by arugula and then the grilled chicken. Place the orange slices, avocado and onion on top of the grilled chicken.
  2. For the Dressing
  3. Whisk all dressing ingredients in a mixing bowl.
  4. Pour the dressing over the sandwich. Enjoy!
