There is something about a strawberry dessert in the spring that I absolutely love! I do not often buy strawberries or put them in dishes or desserts. However, when I do decide to add them to something, I always remember how they infuse such incredible flavor to a recipe. Tasting fresh strawberries in a dish always screams spring to me. When my mom gifted us two cartons of fresh strawberries, we knew we needed to do something that we could enjoy in this beautiful season. The minute this tasty idea was born, we were so thrilled by the outcome. These no-bake individual strawberry cheesecakes came out so perfect and we were in love with every juicy and sweet bite!

When we started this recipe, I was sure that it was going to be difficult. I am not very skilled at baking, so the idea of ‘no-bake’ got me pretty excited. However, I was a little apprehensive about making a dessert given my previous dessert failures. Any time I go into the kitchen to make something sweet, I cross my fingers and brace myself for a little disaster. To my surprise, these no-bake individual strawberry cheesecakes came out without a hitch! This fool-proof outcome proves that if I can make these cheesecakes, anyone can!

After we devoured these fun desserts, I felt so inspired to come up with more sweet recipes that feature fruit. It was so simple to turn these giant, juicy strawberries into a delicious and creamy dessert. With the awesome outcome of these no-bake cheesecakes, I wanted to dream up more recipes that were just as easy. If you see more fruity desserts on our blog, you will know that I am being brave in the kitchen and will be trying to conquer my fear of making desserts!




No-Bake Individual Strawberry Cheesecakes

These no-bake individual strawberry cheesecakes were so effortless and completely decadent! They showcased strawberries perfectly! We loved savoring each bite and enjoyed how rich and creamy they were. Best of all, they were incredibly easy to make for someone who is not skilled at making desserts! Make these for a small gathering or for a surprise for kids. We made these for a date night and loved how fun and simple they were. If you make these, you do not need to use a mason jar if you do not have one on hand. Simply find a short cup, and begin layering the flavorful ingredients. We know that if you try this, it will become a favorite, easy dessert recipe in your house!

No-Bake Individual Strawberry Cheesecakes

Yield: Makes 2 Large Portions, but if put into smaller cups, the recipe can make 4

No-Bake Individual Strawberry Cheesecakes

Ingredients

    For the Crust
  • 2 cups Nilla Wafers
  • 3 tablespoons Butter
  • 2 teaspoons Sugar
  • For the Strawberry Filling
  • 2 1/2 cups Strawberries, chopped
  • 1/4 cup Sugar
  • 1 packet Unflavored Gelatin
  • For the Cheesecake
  • 8 oz. Low - Fat Cream Cheese
  • 1/4 cup Powdered Sugar
  • 1/4 cup of the Strawberry Filling
  • 1/4 cup Heavy Cream
  • 1 Strawberry for the Garnish
  • 2 Mason Jars or Glass Cup

Instructions

    For the Crust
  1. In a food processor, add the Nilla Wafers, butter and sugar. Blend until it is fully crumbled. Place the finished mixture evenly in the bottom of two mason jars. Pat down with a spoon and set aside.
  2. For the Strawberry Filling
  3. Place strawberries in a food processor and pulse until it is fully chopped and resembles a thick juice. Take the mixture and put it in a pot on the stove top on medium heat. Add the sugar. Place the unflavored gelatin in 2 tablespoons of water for two minutes and then add it to the mixture on the stovetop. Mix for three minutes and then remove from heat. When cooled, place in mason jar on top of the cookie layer and put in refrigerator for 1 1/2 hours.
  4. For the Cheesecake
  5. Mix the heavy cream in a stand mixer for about two minutes so that peaks are formed. Add in the cream cheese, powdered sugar, and some of the strawberry filling. Mix for three minutes. Place in refrigerator in mixing bowl for 1 1/2 hours.
  6. For the Individual Strawberry Cheesecakes
  7. After the time in the refrigerator, spoon the cheesecake filling on top of the strawberry layer. Garnish with a strawberry. Enjoy!
