Dan and I love cooking with beans. They are such a versatile, inexpensive and delicious food. So many of our recipes include beans because of these fantastic reasons. Additionally, we love beans for their amazing health benefits. This little heart helper is full of protein, gives us so much energy and is low in fat. While we do eat meat, vegetarian meals are so refreshing and fresh to create each week. These meatless bean meatballs were such a delight to make and were so tasty to devour! We loved how simple they were to whip up and how they were full of so much flavor!




These meatless bean meatballs were an experiment gone completely right! We are pretty obsessed with meatballs and have tried so many different ways to create them. When thinking of how to make meatballs vegetarian, my mind instantly went to using beans. I love their versatility and how they can take on bold and tasty flavors. When making the bean meatballs, we made sure we used tons of flavorings and infused them with a great vegetable. After the delicious base was complete, we pan fried them to seal in the amazing flavors. The end result was a vegetarian and delicious meatball!




 

What we love best about these meatless bean meatballs was the texture. They were unlike anything we had ever tasted and yet they worked so, so well. The outside of each meatball was so crispy and the inside was soft and flavorful. Each bite was an intense flavor explosion and the crisp yet smooth texture was an added bonus.




Just like the beans inside of these meatless meatballs, these savory morsels are so versatile. Put them in a sourdough roll with marinara sauce or on top of a bed of fresh pasta, and you have got yourself a delicious treat! If you make these for kids, they will be getting a great helping of veggies as well as a wonderful portion of beans! Best of all, they are so quick and incredibly simple to make in a hurry. Meatless Bean Meatballs

Ingredients

  • 1 Can Cannellini Beans, drained and rinsed
  • 1/2 cup Zucchini, shredded
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 tablespoon Garlic Powder
  • 1 cup Panko Breadcrumbs
  • 1 Egg
  • 1/4 cup Olive Oil for pan frying

Instructions

  1. In a food processor, pulse the beans, zucchini, salt, pepper and garlic powder. Mix until beans are finely chopped and a thick paste is formed. Place mixture in a medium sized bowl. Mix in egg and breadcrumbs.
  2. When fully mixed, begin creating 1 inch balls. Heat olive oil in a skillet. Place each meatball in skillet. Turn and cook for about 5 minutes until each side of the meatball is crispy and brown. Enjoy!
