This may sound crazy, but I finally just had my first jalapeño popper. I know, it sounds a bit absurd that it took me so long to try something so fantastic. However, after 29 years of being deprived of this fried goodness, I finally sunk my teeth into this incredible invention. This crispy treat, stuffed with gooey cheese and coated in breaded deliciousness, was one of the most exciting food experiences I have had in a while. Even though I have eaten some pretty incredible foods lately, this popper tasted like everything fried and cheesy that I have been missing out on for way too many years. After this deep fried experience, I knew I had to recreate it in some just as tasty way. When we dreamed up these cheesy Jalapeno Popper Quesadillas, we hoped that they were going to capture the incredible essence of my new favorite appetizer. And let me tell you, it definitely did.




Chicken Jalapeno Quesadilla

Completely fast and packed with delicious flavors, these jalapeno popper quesadillas are essential for enjoying during game day.




This recipe marks another football appetizer that we made for our football battles. Each week, we pair two teams together and create a recipe that represents the team in some way. From the city it resides in to some food tradition that is strong, we research what to make that fans will love to make for their team. This week, we concentrated on the Dallas Cowboys and the Green Bay Packers. After all of our research was complete, we basically could not wait to start crafting anything and everything with cheese – and lots of it.

When we delved into the foods that Cowboys fans enjoy, the road led straight to jalapeño poppers. Intrigued about how to make this unique and perfect to eat during a game, we started brainstorming how this fantastic popper could be devoured in another, mouthwatering form.

Creamy Chicken Quesadilla

After some deep thinking that definitely left me drooling, we were so happy to finally land on the idea of a quesadilla. Easy to make after work and fun to serve to guests, this amazingly simple quesadilla was a tasty discovery. Best of all, this recipe was made by simply mixing all of the ingredients in one bowl and then frying the mixture in between two fluffy tortillas. At any skill level, I am sure just about anyone could attempt this delicious meal.

Jalapeno Popper Quesadilla

Prep Time: 10 minutes

Cook Time: 10 minutes

Yield: 3 Quesadillas

Jalapeno Popper Quesadilla

Ingredients

  • 6 Tortillas
  • 1 cup Cheddar Cheese, shredded
  • 1 Grilled Chicken Breast, cubed
  • 1/4 cup Jalapenos, chopped
  • 1/4 cup Light Cream Chesse
  • 1/4 cup Cilantro, chopped
  • Salt and Pepper
  • 2 tablespoons Olive Oil

Instructions

  1. In a large bowl, mix cheddar cheese, chicken, jalapenjos, cream cheese and half of the cilantro. Season with salt and pepper and combine until ingredients are thoroughly mixed.
  2. Spoon the mixture evenly in the center of three tortillas. Top each tortilla with a second tortilla so that there are three different sets. On medium heat, fry each tortilla in olive oil until both sides are golden (about 2-3 minutes each). Top with more cilantro. Enjoy!

Notes

We used pre-cooked chicken breast to make the process even faster.
