Before introducing this healthy burrito bowl recipe, we have a little announcement! We have not posted on here in quite a while! We have missed cooking and sharing our recipes, but we have a very good explanation for missing out for a few months. We are so excited to announce that Dan and I are having a baby, due on New Years Day! We are over the moon and cannot wait to meet this little girl who is kicking up a storm! Because of this little cutie, we took a little break from blogging, but are looking forward to starting up again.

Our journey for this baby was a bit rocky, but we are so thankful for this little girl and the adventure will be starting very soon. We have been hesitant to share our experience but we know that telling others will only help people going through a similar experience. Our first stop to blogging in February came because we lost a baby this past New Years Eve. It was early on in the pregnancy but very difficult for me to process and work through. Getting excited about cooking, writing and posting was close to impossible for me, so we decided to take a little break. We want to expand more on miscarriage soon, and I am thankful for this blog to be able to do this when I am ready. It is a subject that is often quiet, and I know that more people talking about it would have really helped me while we were struggling with the loss. 

The second break from blogging happened the minute my morning sickness kicked in when we found out we were pregnant again in April. Making food, standing in my kitchen and even opening up my fridge made me so sick! My diet quickly shifted from delicious home cooked meals to whatever bread and cheese combinations I could find. Finally, at 22 weeks, I am excited to get back into the kitchen and start cooking amazing meals again!

Right before we found out about this little girl, we made this tasty and healthy burrito bowl. Before my appetite changed to only wanting super bland foods, this burrito bowl was my healthy go-to meal. We loved how simple, fast and delicious it was. Best of all, it can be made with very little preparation and enjoyed with big, bold flavors. With kale, beans and fresh corn and tomatoes, this healthy burrito bowl is a healthy and very filling weeknight meal.

Given that I can finally enjoy cooking again, we will be posting more and more recipes each day. Each of these recipes are healthy and simple foods. Due to this pregnancy, I am trying hard to make nutritious and simple meals that are fast to make on a weeknight. We cannot wait to start showing you these delicious meals and to be making even more again in our kitchen. Yield: Makes 2-3 Bowls

Healthy Burrito Bowl and an Announcement!

Ingredients

  • 2 cups White or Brown Rice, Cooked
  • 1 cup Pinto Beans
  • 1 cup Black Beans
  • 1 Corn, cut
  • 1 cup Cherry Tomatoes, sliced
  • 2 cups Kale, rinsed
  • 1 cup Guacamole
  • 1 cup Cheddar Cheese, shredded
  • For the Sauce
  • 1 cup Sour Cream
  • 1/4 teaspoon Chipotle Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Chili Powder
  • 1 Lime
  • Salt and Pepper

Instructions

  1. In a medium bowl, whisk together all of the ingredients for the sauce. Mix well and set aside.
  2. In each serving bowl, begin assembling the burrito bowls. First place in the rice, followed by the beans. Add in the corn, cherry tomatoes and kale. Top with guacamole and cheese.
  3. Drizzle the sauce evenly on the burrito bowls. Enjoy!
