Hashbrown Macaroni and Cheese

When Allie attended grad school at Mills College in Oakland, one of her favorite things to do was experience the food culture with her sister. The two had their usual stomping ground places, but also a top 10-restaurant list. Amusingly enough, I am sure they have the research to back up such a claim! One of their favorite restaurants to eat at was a gourmet macaroni and cheese restaurant called, Homeroom. Although I have never had the pleasure of eating there, Allie often told me stories about the endless possible mac and cheese plates and their amazing in house root beer. Although we have already made a Grown Up Mac and Cheese, recipe found here, this week’s meal was inspired by one of Allie’s favorite restaurants.




We are always pushing one another to be more adventurous when it comes to cooking and this week was no exception. We knew we wanted to make macaroni and cheese, but what can we do to be different? What can we do to such a guilty pleasure dish that has not already been tried? Well, we are happy to say that we decided to add hash browns to our dish. We absolutely love breakfast, so anything we can do to incorporate it with dinner is a plus.

Hashbrown Macaroni and Cheese

Our goal was to keep Homeroom in mind, so we decided to top our creation with the classic, hash browns. The hash browns were an added treat that packed the right amount of crunch and salt to each bite. Allie is extremely proud that such a specific breakfast item resulted in a savory dinner! Who knew how amazing hash brown macaroni and cheese could really be?




Macaroni and cheese was a staple that Allie and I were both raised on. Although most nights it was not the gourmet versions we have now come to know, there is something nostalgic about the little blue box it came in. Quite possibly because of the various styles Kraft Mac and Cheese had, such as Teenage Mutant Ninja Turtles (an obvious childhood favorite of mine).

Typically when we brainstorm the recipes we will be cooking over the week, we often let our family know what recipes we will be trying. Between you and me, I have noticed that our more savory meals usually result in a sibling member nominating him or herself as a taste subject. There is nothing wrong with that, especially when it comes to family. Our philosophy is the more the merrier! Allie’s younger sister was a great taste tester this time around, who helped to make it pack the perfect punch. When we told her we wanted to create a hash brown macaroni and cheese dish, she eagerly jumped in. We know that this dish will be perfect for a busy family with picky eaters. While it is not the healthiest combination, it can be a great monthly treat that all kids and parents will happily devour together. We challenge you to have leftovers! Enjoy!

Hash Brown Macaroni

Hash Brown Macaroni

Ingredients

  • 1 pound Elbow Pasta
  • 3 cups Whole Milk
  • 1/2 cup Butter
  • 1/2 cup Flour
  • 2 teaspoons Salt
  • 1 1/2 cups Cheddar Cheese, grated
  • 1/2 cup Parmesan Cheese
  • 2 tablespoons Olive Oil
  • 1/2 bag of Frozen Hash Browns

Instructions

  1. Boil water in a large pot and add elbow pasta. In a medium-sized pot, heat milk until it starts to bubble and then reduce the heat. In a separate pot, add the butter. When melted, slowly whisk in the flour. Whisk continuously for about 3 minutes. Add the milk slowly into the flour mixture and whisk continuously. Whisk mixture for another 3 minutes.
  2. Combine cheeses to the mixture and stir. Add the cooked pasta and stir for 5 minutes.
  3. In a large skillet, cook frozen hash browns in oil according to the directions. When fully cooked, add to the top of the macaroni. Enjoy!
