If you try these gooey beet brownies, we know you will be obsessed with how rich, soft and delicious they truly are.
Who knew that adding beets to brownies could be so amazingly delicious?! With our plan to eat healthier foods this year, we decided to give the concept of veggies plus a dessert a try. Since we are focusing on beets this month, we thought it was a great idea to infuse beets into a dessert. These beet brownies were such a fun, sweet treat. With chocolate chips and delicious beets, these brownies were so soft and gooey. We loved how the beets added a great texture to the brownies and how the veggie was secretly hidden in the incredible morsels.
If you are wondering why we are big on the beets, it is because we have a new focus this year. Each month, we will highlight one in season fruit and one in season vegetable. With these ingredients, we will then follow our new goals below.
This year, our blog will stand for:
- Healthy Food – We want to celebrate fresh, whole ingredients and show our readers how accessible and good for you each of our selected fruits and vegetables really are.
- Quick and Easy Meals – This is something we always strive for but will be highlighting this even more this year. We want to make family friendly and delicious meals that take little effort and little time. In order to achieve this, our recipes will have simple steps and helpful shortcuts.
- Using the Same Ingredients in Different Ways – This is our favorite, money saving shortcut! When we repeat the same ingredients throughout the week, we have less food waste, we have fewer grocery bags to make many meals, and of course, we save some major money! Showing you different meals we can make with repeat ingredients in one week, is our very favorite shortcut!
Why did we choose beets this month? Let us tell you why!
Beets are Great for Emotional and Mental Health – Beets are packed with folate which is a benefit for your brain. Folate is important and aids in emotional and mental health.
Beets Help with Healthy Brain and Nerve Function – Beets contain manganese which helps in bone and connective tissues, calcium absorption, carbohydrate and fat metabolism and blood sugar regulation. This mineral in beets ensures your brain and nerves function properly.
Beets Help with Preventing Chronic Diseases – Beets contain betaine which improves vascular risks and helps protect internal organs. It has been linked with reducing risk of stroke and heart disease.
