With Valentine’s day just a week away, we have the easiest dinner to make to impress your Valentine. Dan and I made it this week for a fancy dinner just because. The amazing flavors made this dish so unbelievable! As we devoured every incredible bite, we knew that it would be the best dinner to enjoy again for a fancy occasion. Even though we had it on a random and not so festive Monday, we were certain that it would be the very best meal for an at home date. Not only was it amazingly delicious, but it was also so completely simple to quickly whip together. Between the fast and zesty shrimp and the effortless step of stirring in the cheese and cream, this classic with a twist was so easy! Gnocchi Carbonara

When we thought about what to make for Valentine’s day, we went straight to pasta. In our house, you CANNOT go wrong with pasta! Finding ways to reinvent our favorite dishes is one of our favorite things to do. Whenever we run out of cooking ideas, we know there is a way to create a great pasta dish. We love almost any kind of pasta and have so much fun making it our own every night. Dan is not the biggest fan of gnocchi, but I wanted to see how it would pair with carbonara. Even though it is not his favorite, he absolutely loved this unique combo. He was definitely glad that I decided to cook with gnocchi this time. Adding shrimp on top was the perfect way to enjoy this creamy and delectable dinner.

Gnocchi Carbonara with Shrimp

Gnocchi Carbonara with Shrimp

Ingredients

  • For the Shrimp
  • 1 pound Shrimp, peeled and deveined
  • 1 stick Butter
  • 2 tablespoons Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 1/2 teaspoons Red Chili Flakes
  • 1 tablespoon Parsley Flakes
  • For the Carbonara
  • 1 pound Gnocchi
  • 1 tablespoon Garlic, minced
  • 2 Eggs
  • 1 cup Parmigiano, shredded
  • 1/2 cup Cream
  • 1/4 cup Frozen Peas
  • Pepper
  • 1/4 cup Parsley, chopped

Instructions

  1. For the Shrimp
  2. Melt the butter in a large skillet and add in the garlic, salt, pepper, red chili flakes and parsley.
  3. Add in the shrimp and stir occasionally, until pink, about 4 to 5 minutes. Set aside.
  4. For the Carbonara
  5. Cook the gnocchi according to package instructions in a large pot of water. Drain all but a 1/2 cup of the water. Set aside in the same pot.
  6. In a mixing bowl, whisk together the garlic, eggs, cream and cheese. Remove the gnocchi pot from heat and add the egg and cheese mixture to the gnocchi and remaining water. Stir the mixture very quickly until thickened. Stir in the shrimp and frozen peas. Garnish with pepper and parsley. Enjoy!
