Every once in a while, we make a recipe that requires a bit more work so that delicious greatness can be achieved. Mostly, we stick to easy recipes that are fast enough to make on a weeknight. However, sometimes we get ambitious so that an incredible meal can be enjoyed and devoured. This grilled cheese was not too difficult, but did require a few more steps than we regularly take. We loved how this fried zucchini grilled cheese was so decadent while also being simple to make. It was something we would make to wow family or to have as a weekend treat. Overall, because of the amazing flavors, textures and cheesiness, it is a recipe that definitely cannot be missed!




Recently, we made fried zucchini tacos. We loved the recipe so much that we gave it a twist and adapted it into a grilled sandwich masterpiece. Incorporating fried zucchini into tacos and also into grilled cheese, were two very delicious and fun decisions! Never before had we tried fried zucchini in any other way but by itself. Dunking perfectly crisp zucchini into a zesty sauce is delicious, but so is having it in between two thick and cheesy slices of bread.







Sometimes recipes happen by accident, and this fried zucchini grilled cheese is definitely one of them. When we decided to make our zucchini tacos one more time, I realized that we were out of corn tortillas. Instantly, I was pretty disappointed. However, seeing a loaf of bread on the counter made me so eager to try our initial concoction in sandwich form. We were so happy that this happened, because this grilled cheese sandwich is definitely one of our new favorites.




Even though the zucchini is fried, this is a great way to get kids to eat their vegetables. I know this first hand because I live with someone who would love to skip out on eating anything green. Sometimes I get really inventive with my meals in order to sneak in some fresh veggies for Dan. This grilled cheese is no exception. I can imagine any child’s eyes lighting up when they see this fantastic grilled cheese. I know Dan’s really did! Make this for a small crowd or as a treat to celebrate the end of the long week. Looking at this now is making my mouth water, so I have a strong feeling that we will be making this again in the very near future!







Fried Zucchini Grilled Cheese

Fried Zucchini Grilled Cheese

Ingredients

  • 2 Medium Zucchinis, each cut into 8 strips
  • 2 Eggs, beaten
  • 1 cup Panko
  • 1 cup Parmesan Cheese, Separated
  • Salt and Pepper
  • Olive Oil, for frying
  • 8-12 Slices Texas Toast
  • 2 tablesppons Butter
  • 4-6 Slices Mozzarella
  • 1 cup Fresh Arugula
  • 1 Roma Tomato, sliced
  • For the Sauce
  • 1/4 cup Greek Yogurt
  • 1/4 cup Mayo
  • 1 tablespoon Sriracha
  • 1 teaspoon Lemon Juice
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Horseradish

Instructions

    For the Zucchini
  1. After zucchini is washed and cut into strips, prepare two bowls for breading the zucchini. In one bowl, place the eggs and beat them. In the other, place the panko, 1/4 cup cheese and salt and pepper. Mix thoroughly.
  2. Dip each strip in the egg mixture and then again in the panko. If you want a thicker coat, double dip each strip. Place finished strips on a plate and set aside.
  3. Heat olive oil in a pan. Coat the pan with about two inches of oil. Place each strip in the oil. Cook for three minutes. Turn if the strips are not fully submerged in the oil. Remove with tongs and place finished strips on a plate lined with a paper towel.
  4. For the Sauce
  5. Mix the Greek yogurt, mayo, sriracha, lemon juice, Worcestershire sauce and horseradish in a small bowl. Set aside.
  6. For the Grilled Cheese
  7. Fry each slice of bread in butter and add 2 tablespoons of the Parmesan cheese. When each side of the bread is fried to desired amount, place mozzarella slice on one side and wait until melted. Top the grilled cheese with zucchini, arugula, tomato slice and sauce. Enjoy!
