When we looked into what to make to represent the Atlanta Falcons, we completely hit a wall. Over and over again, the internet told us to make fried chicken. Since we wanted a more creative way to represent the Falcons, we went back to the drawing board and kept searching for something delicious and fun to make. Finally, after several dead ends, we stumbled upon a dish that made us both get extremely excited. When we discovered fried chicken tacos from a celebrated restaurant in Atlanta, we knew we had to make them ourselves. After one look of the pictures online, we were addicted and had to figure out how to make them our own.

Wanting to give these amazing fired chicken tacos a fresh spin, we added a zesty peach salsa to highlight Georgia’s famous fruit. Together with a spicy mayo and crispy chicken, these tacos were completely the best combination. After every bite, I was definitely knocked off my feet.

Fried Chicken Tacos with Peach Salsa

Fried Chicken Tacos with Peach Salsa

Ingredients

  • 1 pound Chicken Tenders
  • 1/2 cup Panko
  • 1 cup Corn Flakes, crushed
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 cup Buttermilk
  • 1 Tomato, chopped
  • 1 Peach, chopped
  • 1/4 cup Onion, diced
  • 1/2 bunch Cilantro, chopped
  • 2 tablespoons Lime Juice
  • 3 tablespoons Mayonaise
  • 2 teaspoons Lemon Juice
  • 2 teaspoons Sriracha
  • 1/2 teaspoon Sugar
  • 4-6 tortillas

Instructions

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, mix the panko, corn flakes, paprika and salt. In a second medium bowl, add the buttermilk.
  3. Piece by piece, dredge the chicken in the buttermilk and then the panko mixture until all pieces are coated. Place the chicken on a greased baking sheet and spray cooking spray on top of each chicken tender. Bake in oven for 30 minutes remove from oven and set aside.
  4. In a small bowl, mix together the tomato, peach, onion, cilantro and lime juice.
  5. TO make the sauce, mix together the mayonnaise, lemon juice, Sriracha and sugar. In each tortilla, equally place chicken tenders, peach salsa and sauce. Enjoy!
