Even though the weather is not ready, Dan and I are so ready for fall to come! Although we absolutely love summer, there is something so fun about the fall. We love the food, the traditions and the cool weather that goes hand in hand with this awesome season. In preparation for the fall and in disgust of the heat, we made a dish that perfectly encompasses fall and all of its tasty flavors. This fig and pancetta tortellini was so simple and was the perfect way to welcome fall. With every bite, we were so excited in anticipation for all that fall holds.

After Labor Day, Dan and I usually get so consumed with dreaming about how we will enjoy the next season. We love making plans for visiting Apple Hill and drinking lots of cider. From baking things with apples to cooking with pumpkin and butternut squash, we love creating meals that perfectly embody fall. With our new home, we now have had many a discussion about decorating our house for Halloween or preparing for finally getting trick-or-treaters. We also have been planning desserts and sweet treats to make our kitchen smell just like autumn. There are so many traditions that fall holds for us, and we love making new ones each year.

This fig and pancetta tortellini has all of the flavors that I dream about when I think of fall. With browned butter, juicy figs and crispy pancetta, this dinner is everything I love and more about the fall. Once the weather cools down even more, I will be so excited to make this again and embrace every aspect of this perfect, autumn dish. As for now, it is the perfect way to hope for cooler weather and to get excited for the next few months. Make this dinner as an easy weeknight dish or for a fun date night dinner for two. This tortellini meal is so fast and yet holds so many bold flavors. Whether you make it now or just in time to celebrate fall, this simple dinner will definitely impress.

Fig and Pancetta Tortellini

Ingredients

  • 1 package Tortellini
  • 1/2 cup Pancetta, chopped
  • 6 tablespoons Butter
  • Sat and Pepper
  • 1/4 cup Parmesan Cheese
  • 10 Sage leaves
  • 1/4 cup Goat Cheese, crumbled
  • 4 Figs, sliced

Instructions

  1. Cook the tortellini according to package instructions. In a large pan, crisp the pancetta. Once the pancetta is cooked, place it on a paper towel and drain half of the fat. Melt the butter in the same pan and add the parmesan cheese. Season with salt and pepper. Cook until butter is browned.
  2. Pour the butter mixture on top of the tortellini. In the same pan, heat the sage. Cook for about two minutes on each side.
  3. Top the tortellini with the sage goat cheese and figs. Enjoy!
