When I first sliced open the sweet potatoes we bought for our side dish, I was completely shocked. When I purchased sweet potatoes from the grocery store, I thought that my produce would be a certain color. The minute I planned this recipe, I pictured a vibrant orange color, sprinkled with gorgeous, fresh thyme. However, when I cut into this vegetable, I was disappointed and pretty confused. While I was panicking in the kitchen and wondering what I bought, Dan answered my question with a little help from Google. After some reading, Dan enlightened me about all of the colors that sweet potatoes come in. Once I finally got over my vision for a bright sweet potato bake and realized that I was indeed cooking with sweet potatoes, I embraced this new direction for our side dish. The minute I took a bite of this rich, creamy and sweet bake, I was so impressed with all of the delicious flavors.

Thanksgiving is easily one of my favorite holidays and I love making flavorful, fall dishes leading up to the big day. Once November hits, I get so excited to celebrate Thanksgiving, that I buy ingredients that embody the delicious holiday. Before Thanksgiving I eat foods and flavors that are just like the ones served on the holiday and never grow old of those incredible, tasty foods. Now that we cook almost every night and have a blog, we love experimenting with Thanksgiving foods and flavors. Creating different dishes that taste just like my favorite flavors on Thanksgiving, make me so excited to eat on the big day. Since neither of us have cooked food for Thanksgiving before, this is our way of enjoying and making our own delicious Thanksgiving sides and main dishes.

Easy Sweet Potato Bake

Ingredients

  • 3 Sweet Potatoes, sliced using a mandolin
  • 2 tablespoon Olive Oil
  • 1/2 cup Goat Cheese
  • 1/2 cup Parmesan Cheese
  • 2 tablespoons Thyme
  • Salt and Pepper

Instructions

  1. Preheat the oven to 375 degrees. Place sliced sweet potatoes in a baking dish and drizzle with olive oil. Bake for 50 minutes or until soft.
  2. Place goat cheese and parmesan cheese over the potatoes. Place back in the oven for 7 minutes. Garnish with thyme, salt and pepper and any remaining parmesan cheese. Enjoy!
