When we find a good shortcut while cooking, we happily embrace it. Lately, rotisserie chicken has been our favorite cooking shortcut to have a fast weeknight dinner. Rather than cooking a chicken breast, waiting for it to be ready and then shredding it, rotisserie chicken lets us prepare and eat our dish right away. When we thought of adding rotisserie chicken to fajitas, we quickly knew it was a brilliant decision. Fajitas in less than 20 minutes? Yes please! Rotisserie Chicken Fajitas

Fajitas are something I never make and never order but am so envious when I see other people eating them. Without trying fajitas, you can tell what they will taste like just by the incredible and sizzling smells. When we made these amazing rotisserie chicken fajitas, our whole home smelled like the zesty and flavorful aromas of piping hot seasoned veggies and chicken. My mouth completely watered when I cooked them and I could hardly wait to dig in.

The best part about these fajitas is that they are ready so completely quickly. With very few steps, a wonderful, sizzling fajita dish is ready to be devoured. While this dish would also make wonderful leftovers, Dan and I could not help ourselves and ate every little bite. If you make these irresistible and effortless fajitas, you will definitely understand.

With our break in full swing, we are loving being able to whip up something quick and still enjoy our day. Making something so flavorful with very little prep and clean up is exactly what this break called for! Easy Rotisserie Chicken Fajitas

Easy Rotisserie Chicken Fajitas

Ingredients

  • 1 teaspoon Chili Powder
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Pepper
  • 1/2 teaspoon Salt
  • 1 Rotisserie Chicken
  • 1 Onion, sliced
  • 3 Bell Peppers, sliced
  • 1 Lime
  • 3 Tablespoons Olive
  • 6-8 Tortillas
  • 1/4 cup Cheddar Cheese, shredded
  • 1/4 cup Pomegranates
  • Cilantro for garnish

Instructions

  1. In a mixing bowl, add the chili powder, smoked paprika, onion powder, cumin, salt and pepper. Mix thoroughly.
  2. Shred the chicken and dredge it in the spice mixture.
  3. In a pan, heat 1/2 the olive oil and cook the onion and bell peppers on medium heat until soft.
  4. Add the chicken to the pan with the cooked vegetables and pour the remaining olive oil on top of the mixture. Juice the lime on the ingredients. Heat for 3 to 4 minutes.
  5. Serve on tortillas with cheddar cheese, pomegranates and cilantro. Enjoy!
