Dan and I have loved becoming more adventurous in our cooking! We tend to make things that are easy and accessible to all levels of home cooks. This recipe fits right in with our simple and fun favorites. Cooking with lobster is something that we have been very intimidated to do. The very first time we used lobster in our lobster pot pies, we were amazed and surprised by the incredible ease! When we began brainstorming something fun to make for dinner, this idea was at the top of the list. Given that our first experience in cooking lobster was so easy, we decided to dive right in and experiment with this decedent ingredient once again. Our easy lobster nachos were not only incredibly simple, but they were an amazing treat that will be sure to wow a crowd!

Before we jump into creating delicious fall meals, we are enjoying the last days of summer with light and fun dishes. We cannot wait for pumpkins, warm meals and comfort foods. Before the start of this fall madness (that we will definitely be showcasing soon), we want to relish in our favorite summer foods. These nachos are completely perfect for any season and are great for a small gathering. We love them best for summer because they can be enjoyed while watching a game on TV, outside on the patio, or to make quickly after a long day at the pool. We think that this creative appetizer is the perfect way to say goodbye to one of our favorite seasons.

My favorite part about this meal is that it is amazingly easy and exciting to serve. Just saying the words “lobster nachos” made us so eager to hop into the kitchen and start cooking. It was so fun to shop for the ingredients and invent how this dish should taste. We wanted to put a fancier twist on nachos and used Gruyere and Fontina cheese to pair beautifully with the lobster. We also wanted traditional nacho ingredients to ensure that the flavors would be amazing. With these combinations, we created something that is so fast and so inciting to eat in one sitting. Make sure that when you make these extraordinary and easy lobster nachos, that every bite is loaded with a great amount of cheese and lobster. If you follow this rule, you will be dreaming about this dish over and over after you enjoy it the first time. We know we are!




Lobster Nachos

Lobster Nachos

Ingredients

  • 2 Lobster Tails
  • Olive oil
  • Salt and Pepper
  • 2 tablespoons Butter
  • 1 ½ cups Milk
  • ½ cup Flour
  • 1 cup Gruyere Cheese, grated
  • ¾ cup Fontina Cheese, grated
  • ¾ cup Cheddar Cheese, grated
  • Salt and Pepper
  • 1 bag (13 ounces) Tortilla Chips
  • ¼ cup Chives, chopped
  • 1 Roma Tomato, diced
  • ¼ cup Canned Corn
  • ½ cup Pinto Beans
  • 1 Radish, sliced
  • 1 Avocado, diced

Instructions

  1. Prepare lobster tails by cutting them open and removing the shell. In a skillet, cook each side for 3 minutes or until meat is no longer translucent. Season and dice the lobster.
  2. In a medium saucepan, melt butter on low heat. Add milk and slowly whisk in flour. Whisk continuously while slowly pouring in the cheese. Continue whisking until the mixture is thick and fully melted. Generously season the cheese sauce with salt and pepper. Remove from heat.
  3. Place chips on a large plate. Top with warm cheese mixture, chives, tomatoes, corn, beans, radishes, avocados and lobster tails. Enjoy!
