Happy 2018 everyone! We are back after taking a week to take it easy and to brainstorm what we want to achieve this year. Our year started off with a few bumps, but we are excited to share with you our plans to make this year count. Allie and I have come up with a plan to make cooking even easier for our family and also for yours. We have drafted some goals that will help us to maintain a focus for the year so that you can achieve the same ease when putting dinner on the table. We will of course introduce this amazing and fresh kale hummus with you. But first, here is a sneak peek into our cooking strategies for 2018. We cannot wait to go on this food journey with all of you!

Kale HummusAlong with drafting some goals, we have created a plan to help maintain them. Each month, we have selected two ingredients that we will highlight and focus on. For the entire year, we have mapped out one vegetable and one fruit that will be repeated in all of our dishes for each month. Each of these foods are seasonal and are chosen for the month based on their prevalence in stores and farmers markets and for their seasonality. This is a strategy that is awesome for many reasons. First, it makes sure that healthy nutrients are emphasized in our meals. Second, it is a quick way to make meal planning easy. Lastly, highlighting foods all month long will cut down on food costs, have less food waste and will use fewer grocery bags.  Below, we have further explained and mapped out our goals so that you can follow along with each of them.

Kale Hummus

This year, our blog will stand for:

1. Healthy Food – We want to celebrate fresh, whole ingredients and show our readers how accessible and good for you each of our selected fruits and vegetables really are.

2. Quick and Easy Meals – This is something we always strive for but will be highlighting this even more this year. We want to make family friendly and delicious meals that take little effort and little time. In order to achieve this, our recipes will have simple steps and helpful shortcuts.

3. Using the Same Ingredients in Different Ways – This is our favorite, money saving shortcut! When we repeat the same ingredients throughout the week, we have less food waste, we have fewer grocery bags to make many meals, and of course, we save some major money! Showing you different meals we can make with repeat ingredients in one week, is our very favorite shortcut!

Kale Hummus

We will now introduce our two ingredients of the month that we will be focusing on all of January! Our reasons for choosing these foods are plenty, but we will go into more of the why when we show you our first recipe highlighting beets. There are many nutritional reasons, but we will save that for our next post. For now, we will give you our reasons why these foods are our favorite for January.

Ingredients of the Month:

1. Why Beets? 

A little bit of beets goes a very long way. Not only do they add an incredible, vibrant color to any dish, but the sweet flavor they add is hard to emulate. We love how they can easily sneak into a dish so that picky eaters cannot detect them. Of course, they add a bright, recognizable color to anything they touch. However, they also give dishes a wonderful sweetness and perfect texture that other foods cannot do in quite the same, delicious manner. For nutrition information on beets, click here.

2. Why Oranges?

Being that Allie is a teacher, we are always trying to infuse oranges into our diet. This is for one very good reason. Oranges help immunity and kids at any school are often sick. With flu season at its peak, we thought that oranges would be the perfect ingredient to add to our meals. Since oranges are in season and they add a beautiful citrus tone to any dish, we knew this would be the perfect fruit to give some much needed attention to. For nutrition information on oranges, click here.

Kale Hummus

Okay, now finally onto this incredible kale hummus. When I say incredible, I mean incredible. Kale, like beets, is something we love to sneak into foods. It is a powerful, good for you food that we love to work with. Sneaking kale into this yummy kale hummus was a delicious decision. Because the kale is so flavorful and mixes well with the salt, pepper, garlic and paprika, it adds a great balance to this simple hummus. Make this kale hummus for a quick snack or an easy appetizer for guests. Pair it with crackers, pita chips or veggies. Whether you feed it to your kids, your friends or to yourselves, you will keep digging in. We guarantee it.

Easy Kale Hummus

Easy Kale Hummus


  • 3 cups Kale, washed and chopped
  • 2 tablespoons Garlic, minced
  • 1/2 cup Olive Oil, separated
  • 1 can Garbanzo Beans, cooked and drained
  • 1/4 cup Tahini
  • 2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Paprika


  1. In a skillet, add 2 tablespoons of olive oil and garlic. On medium heat, sauté the kale. Cook until soft, about five minutes.
  2. Place garbanzo beans in a food processor. Add in the kale, tahini, paprika, salt and pepper. Puree until thoroughly smooth and blended. While it is grinding, slowly pour in the olive oil. Mix until all of the olive oil is added and the hummus is smooth. If you prefer a creamier blend, add water, 1/4 cup at a time until desired consistency is achieved.
  3. Enjoy!
