One of our favorite Saturday morning traditions is going to local Farmers’ Markets. Every Saturday, we try to have the perfect combination of Food Network shows, coffee and a quick stroll through a Farmers’ Market. Without these things, our Saturdays are not complete. We love all of the delicious produce and goods that can be found in our local Sacramento Farmers’ Markets. Lately, we have discovered a small but amazing market right around the corner from us. Although it is so close, we foolishly have overlooked it this summer. We are so glad that we gave it a shot last week, because we found some of the tastiest vegetables! In turn, because of our spur of the moment visit, we were able to create some of the best dishes from one shopping bag. This meal in particular was inspired solely from our trip. We found gorgeous eggplant and perfectly ripe tomatoes. With this combination, we knew that eggplant pomodoro would be a fantastic dish to try. This easy eggplant pomodoro tasted just like summer and was the perfect light, yet satisfying dish to make in a hurry. Every bite was so refreshing and highlighted the fresh vegetables beautifully.




Easy Eggplant Pomodoro




Eggplant is one of those foods that I often overlook. When looking for foods to put into pastas or other hearty dishes, I mostly choose the same vegetables to incorporate into our foods. Each time I grab an eggplant instead of a zucchini, it is always a tasty decision. Eggplant adds so much to meals, whether it is the centerpiece of the dish or an unexpected side. We especially love when it replaces meat or when it adds incredible texture to a dinner.

This easy eggplant pomodoro is something that was so completely enjoyable to eat. With every bite, Dan and I kept looking at each other in amazement. We loved how it was so fresh and light and yet kept us full all night. With summer not yet coming to an end, it perfectly embodied all of the great flavors of this great season. Even though I am sad to see summer ending soon, this meal helped to keep summer alive a little longer. We know that if you try it, you will love how flavorful, bold and delicious this summer pasta truly is. Easy Eggplant Pomodoro

Ingredients

  • 1 Eggplant, cubed
  • 2 tablespoons Garlic, minced
  • 4 Roma Tomatoes, diced
  • 2 tablespoons Olive Oil
  • 1/4 cup Pitted Green Olives, chopped
  • 1/2 cup White Wine
  • 3 teaspoons Capers
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1/2 teaspoon Crushed Red Pepper
  • 1/2 box Thin Spaghetti
  • 1/4 cup Basil, chopped
  • 1/4 cup Shaved Parmesan Cheese

Instructions

  1. In a skillet on medium heat, heat oil and garlic. Add eggplant and tomatoes and cook for 6 minutes, stirring occasionally. Pour in white wine, and cook uncovered for 5 minutes. Add capers, salt, pepper, half of the basil and crushed red pepper and cook covered for ten minutes.
  2. Boil spaghetti, drain and mix into tomato and eggplant mixture. Add a quarter cup of the pasta water into the mixture and stir.
  3. Garnish the pasta with basil and Parmesan cheese. Enjoy!
