Have you ever wondered what you can do with cheese and tortillas besides making quesadillas  and enchiladas? We definitely have wondered that and have become tired of our usual tortilla and cheese dishes. Over and over again, we make these common and quick weeknight dishes and change out a few ingredients to make them feel fresh. Finally, after too many of these meals, we went searching for another way to enjoy our love of tortillas. After a quick search, we stumbled upon the delicious and gooey flauta. In an effort to give these flautas a Cuban spin, we created these cuban chicken flautas. Every bite of these cheesy and flavorful flautas were so incredible and got us so excited to experiment with these delicious tortilla and cheese bites again!




 

Easy Chicken Flautas




This week, our football recipe represents the Tampa Bay Buccaneers. Everything we researched about Tampa Bay, pointed to making Cuban inspired food. Given that we are pretty unfamiliar with those flavors, we looked at different recipes that incorporate traditional Cuban tastes. When we mixed these recipes together and gave it our own spin, we came up with these easy cuban chicken flautas.

 




With a pineapple salsa and a bold chicken and cheesy inside, these cuban flautas are so irresistible. We loved how simple they were to make and how deliciously effortless they truly were. After the chicken was marinated and the salsa was made, the other steps were a complete breeze. Once we realized how tasty these cuban chicken flautas were, we knew that they would be an easy weeknight staple in our home.




 

Fast Chicken Flautas




When we put our two recipes head to head, we were able to come up with a winner. This week, we created game day food for the Carolina Panthers and the Tampa Bay Buccaneers. For the Carolina Panthers, we made delicious meatballs with a tangy barbecue sauce. When we compared the two football foods, it was tricky to come up with a winner. Given the unexpected ease and a zesty burst of flavors, we chose these cheesy chicken flautas. After devouring each one, we could easily see ourselves serving these in front of the game for family and friends.

Whether you cheer on the Buccaneers or any other team, these cuban chicken flautas will become your new, favorite game day food. If you are tailgating or watching the game from your couch, these flautas are a great treat! You will love how simple and how delicious each bite really is.

Easy Cuban Flautas

Ingredients

  • 1 Chicken Breast
  • 1/4 cup Orange Juice
  • 1 tablespoon Lime Juice
  • 1 teaspoon Garlic, minced
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Red Chili Flakes
  • 1/2 teaspoon Salt
  • 1/4 cup Salsa Verde Sauce
  • 1 1/2 cups Monterey Jack Cheese
  • 8-10 Flour Tortillas
  • 2 tablespoons Olive Oil
  • 1/2 cup Black Beans
  • 1/4 cup Pineapple, chopped
  • 1 Lime, juiced
  • 1/4 cup Cilantro, chopped
  • 1/4 cup Sour Cream

Instructions

  1. In a mixing bowl, combine the orange juice, lime juice, garlic, paprika, salt and red chili flakes. Place both the chicken and the mixture in a large ziplock bag and marinate in the fridge for 30 minutes.
  2. Preheat oven to 375 degrees. Bake the chicken for 20 minutes. Shred.
  3. Assemble each tortilla by equally adding chicken, salsa verde and cheese. Roll each tortilla tightly and coat with olive oil. Place on a greased baking sheet, with the seem side down. Repeat with each tortilla.
  4. Bake flautas at 375 degrees for 15 to 20 minutes. While baking, mix the black beans, pineapple, lime juice and sauce cream. Place on top of each flauta. Top with sour cream. Enjoy!

  6. Place chicken in a 13- x 9-inch baking pan coated with cooking spray. Bake, covered, 20 minutes; uncover and bake 25 minutes or until chicken is done.
