When we made these chilaquiles, we knew that having Molli’s Veracruz would give the perfect zest for our dinner. Easy Chilaquiles with Molli Sauce

Ingredients

  • 1 can Veracruz Molli Sauce (16 oz.)
  • 1 cup Chicken Stock
  • 1 bag Tortilla Chips
  • 2 tablespoons Olive Oil
  • 1 1/2 cups Cheddar Cheese, shredded
  • 3 Eggs
  • 2 Radishes, slices
  • 1/4 cup Green Onions. chopped
  • 1/4 cup Cilantro
  • 1/4 cup Chives, chopped

Instructions

  1. In a large skillet, cook the Molli Sauce and the chicken stock on medium heat. Stir occasionally.
  2. On a baking sheet lined with foil, place tortilla chips so that they are hardly overlapping. Coat the chips evenly with olive oil. Broil in the oven for 5 minutes or until golden brown.
  3. Fold the chips into the sauce and cover with cheese. Cook on medium heat for 5 minutes or until cheese is melted.
  4. In a separate pan, fry the eggs. When fried in desired manner, add to the skillet of chips and sauce.
  5. Top with radishes, green onions, cilantro and chives. Enjoy!
