This easy beet risotto is so creamy, so rich and is beautifully vibrant! You will love how simple it is to cook and how incredible it is to serve and enjoy.

We are so excited to bring you our first recipe of our new, healthy series. We will be doing this series all year round and will highlight chosen ingredients that are seasonal and fresh. For this month, we have chosen oranges and beets! We love these two seasonal foods and have already made several dishes that incorporate these two, lovely ingredients. This first recipe is so velvety and rich and the color perfectly represents this delicious root vegetable we have chosen. Our easy beet risotto is so perfect for a fun and quick weeknight or date night meal. It can make a weeknight meal feel fancier and adds a wonderful touch to a date night dinner in. Best of all, it’s so amazingly easy and incorporates a food that is so tasty and wholesome.

Beet Risotto

We chose beets for our first month because it is in season, and because it is one of our favorite foods. We love how a little bit of beets goes a long way and that it turns any meal into a vibrant and colorful one! It is also a favorite in our home because it adds a great texture to meals and can be added to almost any dish. For picky eaters, it is easy to mask it in desserts or dinners without anyone able to detect it (except for maybe the very bright color!). Besides the fun aspects of beets, there are also a ton of great health benefits that this tasty food brings. Beet Risotto

Beets are Great for Emotional and Mental Health –  Beets are packed with folate which is a benefit for your brain. Folate is important and aids in emotional and mental health.

Beets Help with Healthy Brain and Nerve Function – Beets contain manganese which helps in bone and connective tissues, calcium absorption, carbohydrate and fat metabolism and blood sugar regulation. This mineral in beets ensures your brain and nerves function properly.

Beets Help with Preventing Chronic Diseases – Beets contain betaine which improves vascular risks and helps protect internal organs. It has been linked with reducing risk of stroke and heart disease.

You will love every bite of this gorgeous, winter, beet-filled dish! 

Easy Beet Risotto

Easy Beet Risotto

Ingredients

  • 1 cup Arborio Rice
  • Salt and Pepper
  • Olive Oil
  • 1 medium white onion, chopped
  • 1/4 cup White Wine
  • ¼ cup Parmesan cheese
  • 2 tbs. minced garlic
  • ½ cup water
  • 1 ¾ cups chicken broth or vegetable broth
  • 1/2 cup Beets, chopped and cooked
  • 1/4 cup Goat Cheese, crumbled
  • 1/4 cup Watercress (optional)

Instructions

  1. Place a medium sized saucepan on the stovetop and turn to medium heat. Pour the chicken broth and water in the medium sized saucepan, and cover. Bring to a boil and reduce heat.
  2. Put a medium size skillet on the stovetop and turn to medium heat. Pour a tablespoon of olive oil into the skillet, and then add the onions. Add the wine and cook for four minutes. Season with garlic, salt and pepper. Let this sauté for about 3 minutes. Pour in the Arborio Rice and let it cook for about 2 minutes or until the rice begins to turn translucent.
  3. Pour the rice into the warm stock mixture. Cover, reduce the heat to medium-low, and let it cook for about 15 minutes. After cooking, stir for about 4 minutes with a wooden spoon until the liquid is almost gone. Add the parmesan cheese. Keep on the heat, and stir for another 4 minutes until the dish gets creamy.
  4. Stir in the beets thoroughly and cook for three more minutes. Top with goat cheese and watercress. Enjoy!
