If you ask Dan and I what our favorite thing to make is, we would both quickly reply with meatballs. There is something so fun and satisfying about mixing all of the ingredients and getting messy while cooking. We also love devouring every juicy bite after they are complete. Whenever we make meatballs, whether they are turkey based, stuffed with cheese or vegetarian, we enjoy savoring every little bit of them. This time when we made meatballs, we wanted to make them more accessible for eating them during a football game. Covering them with a barbecue sauce made these juicy meatballs even more satisfying and fun for a crowd. These barbecue meatballs smothered in a tangy sauce are the most delicious appetizer that your guests will completely love.




 

Barbecue Meatballs




This week, we are making recipes to represent both the Carolina Panthers and the Tampa Bay Buccaneers. Our process of making game day food each week has been the most delicious journey. Every week when we research regions, cities and teams, we fall in love with trying and making new, adventurous foods. These meatballs to represent the Carolina Panthers are no exception. When we looked up what to make for the Panthers, everything pointed to barbecue. While we did not want to make something cliche to highlight the team, we decided to go an unexpected route. Rather than making a pulled meat to pair with barbecue sauce, we took an Italian classic and made it compliment a tangy sauce.

Each week when we take a spin on a team’s football food traditions, we are amazed by the creativity it brings. Instead of giving another take on the same go-to game day food, we enjoy surprising ourselves and thinking outside the box. Our tastebuds especially like this shift as we are constantly exploring flavors that we normally do not experience together.

Given that we made these for dinner and not for a gathering, we paired these with a sourdough roll and had a fantastic barbecue meatball sub. Easy BBQ Meatballs

Ingredients

  • 1 pound Lean Ground Beef
  • 1 pound Ground Pork
  • 2 Eggs
  • 2 Tablespoons Salt And Pepper
  • 1 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Olive Oil
  • ¼ cups Ketchup
  • 1 cup Ketchup
  • 1/2 cup Apple Juice
  • 1/4 cup Apple Cider Vinegar
  • 2 tablespoons Applewood Rub
  • 2 tablespoons Brown Sugar
  • 2 tablespoons Garlic Powder
  • 1/4 cup Parsley, chopped

Instructions

  1. In a large mixing bowl, add beef and pork and combine with hands. Once mixed, add the two eggs and continue to knead the mixture with hands. While continuing to mix, add the breadcrumbs, salt and pepper, Worcestershire sauce, olive oil and ketchup.
  2. Once all ingredients are combined, begin forming the meatballs. Grab a medium-sized mixture of the meat and loosely roll a ball.
  3. Do not firmly pack the meatballs. The meatballs can vary in shape and size.
  4. Place each of the meatballs in a large, greased Pyrex dish and place in the oven at 375 degrees for about 25-28 minutes. If the meatballs are smaller, cook closer to 22-25 minutes, and if they are larger, cook closer to 28-30 minutes.
  5. In a mixing bowl, combine the ketchup, apple juice, apple cider vinegar, applewood rub, brown sugar and garlic powder. Pour the mixture into a saucepan and simmer on low for 15 minutes.
  6. Pour sauce over the meatballs and garnish with parsley. Enjoy!
