It feels like Christmas in our house and we are loving this time of year! We hope everyone had a wonderful Thanksgiving and are settling into this new, busy holiday. With a relaxing week off, I have been able to get this home feeling like the holidays. Thanks to a cold, rainy day, Dan and I have finished decorating and I am officially looking at a beautiful Christmas tree in our new home. This time of year is seriously the best and we are loving this lazy and festive afternoon amidst cozy and Christmasy decorations. One thing that this day would not be complete without is football. Dan just suffered through a cheesy Christmas movie that made me cry, and afterward, he was promised the 49ers game. It was definitely well deserved. While we watch the game, we are enjoying these incredible Denver omelet quiche bites that we made for our football appetizer series. These cheesy and savory bites are the perfect treat on this cold afternoon in front of the football game.







When we researched what to make for the Denver Broncos, we stopped immediately at the classic Denver omelet. We love Denver omelets and knew we could make them accessible for football food. After reading some things about the Denver omelet, we discovered that this delicious food actually started out as a sandwich with the egg mixture in between two slices of bread. Brining it back to it roots, we decided to pair it with crust and pour our eggs into cups of pie crust. When we finished these incredible bites, it was clear that they were the perfect treat to make to represent the Denver Broncos.

Denver Omelet Quiche Bites

Ingredients

  • 1 sheet Frozen Pie Dough, thawed
  • 6 Eggs
  • 1/4 cup Milk
  • Salt and Pepper
  • 1/2 cup Ham, chopped
  • 2 Bell Peppers, chopped
  • 1/2 cup Sharp Cheddar Cheese, grated

Instructions

  1. Preheat the oven to 400 degrees. Grease a cupcake tray. Cut the pie dough into 12 equal squares. Line each tin with pie dough so that it covers all sides of the tin and touches the bottom.
  2. In a large mixing bowl, whisk the eggs and pour in the milk. Season with salt and pepper and whisk until eggs are beaten. Add in the ham, peppers and cheese until thoroughly mixed.
  3. Pour the egg mixture into the pie cups. Place in the oven for 18-20 minutes or until the egg is fully cooked and the pie crust is golden brown. Serve and enjoy!
