Packed with spinach and loaded with creamy flavors, this delicious spinach gratin is the most irresistible and easy winter side.

This is one of my new favorite dishes that I am sure you will love too! Right now, we are on a healthy kick, trying to add more nutrients and vegetables to our meals. We have had fun with this and have loved this new effort to make food healthier. When we thought of this spinach gratin, we did not know how completely delicious it would really be. Packing it full of spinach made us feel so much better about each, creamy bite. Whether you make it as a side or a main dish, you will love how rich, creamy and healthy it really is.




 

Spinach Gratin




When we made this fantastic gratin, I loved the feeling of emptying one entire carton of spinach into the skillet. There was something so satisfying about using every ounce of spinach in the container. Instead of eating every single leaf in a salad, we got to enjoy an amazing amount of spinach in an incredible skillet with rich flavors. Warming it and topping it with crunch and cheese made it something I now have craved every day since.

Somehow, Christmas is right around the corner and we are feeling a bit stressed! A week from tomorrow is the big day, and I can hardly believe that it is almost here again! We have not procrastinated shopping too much, but have forgotten a gift or two. The stress of making Christmas just right, is making us go a bit crazy. With just a few more Christmas errands to go, we will hopefully be a bit more relaxed and can enjoy this fun season. After a few more things to do, we can finally sit back and embrace all that goes with Christmas. With just three more days of teaching left, I am looking forward to finishing it all!




Spinach Gratin

This incredible spinach gratin is something that everyone will love. Even though it is jam packed with spinach, kids will definitely want more than one scoop. The cheesiness mixed with a salty cracker crunch, is something your whole crew will want to gobble up. Little will they know that a whole container of spinach was used to create this irresistible dish. Even though we ate it as a main dish, it would be a great side dish for a quick and healthy weeknight dinner. We hope you try this incredible gratin and enjoy every healthy and creamy bite!

Delicious Spinach Gratin

Delicious Spinach Gratin

Ingredients

  • 2 tablespoons Olive Oil
  • 1 tablespoon Garlic, minced
  • Salt and Pepper
  • 2 cups Fresh Spinach
  • 1 White Onion, chopped
  • 2 tablespoons Flour
  • 1 cup Milk
  • 1/4 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, grated
  • 8 Ritz Crackers, crumbled

Instructions

  1. Preheat oven to 375 degrees.
  2. In a large skillet, heat the olive oil and add the garlic and onion. Sauté the onion for 5 minutes or until soft and translucent. Add in the spinach and cook until wilted, about three minutes. Season with salt and pepper. Remove from heat and set aside.
  3. In a large saucepan on medium heat, warm the milk. Whisk in the heavy cream until thickened, mixing continuously. Add the flour and continue whisking. Pour in 1/2 of the grated Parmesan and whisk until melted.
  4. Place the spinach mixture in a baking dish. Top with remaining cheese and Ritz crackers. Bake for 20 minutes. Enjoy!
