Every once in a while, Dan and I will opt in for cooking a fancy dinner at home, rather than going somewhere for a date night. We love having date nights in, especially if they center around cooking great meals together. When either of us have this inkling to cook instead of having someone else cook for us, we try to go all out and make something adventurous. In the past, we have experimented with making lobster pot pies, cooking amazing Bolognese, and even making deliciously fun bacon jam burgers. These cooking date nights have been some of our favorite meals we have ever made. When we created this recipe, we thought that there would be several complicated steps to our dinner. However, once we got started, our hour long time slot turned into about twenty minutes of quick cooking. Of course, we were pleased by the effortlessness that came with this incredible meal. If you are looking for a fancy meal that can be executed and enjoyed very quickly, then this creamy scallop pancetta pasta is the perfect dish!




Creamy Scallop Pancetta Pasta

Dan and I have never really eaten scallops before but have been extremely intrigued by them. My sister orders scallops at almost every restaurant we go to as a family, so Dan and I assumed that they must be pretty decent. When we looked up how to cook scallops, we were very excited to learn that they are fairly simple to prepare. This paired with my sister’s obsession made us dive in and decided to buy them. With ingredients we had already in our fridge (I think we are the only people who always have pancetta on hand), we decided to take on this very interesting seafood.

Once Dan perfectly seasoned and seared the scallops, I was so thrilled to finally try our little masterpieces. Admittedly, the texture was difficult for me, but overall the flavor was pretty fantastic! Paired with the creamy and salty pancetta sauce, these scallops were a real winner!

This creamy scallop pancetta pasta is a great date night dish that will impress anyone who loves scallops. The combination of flavors was perfect, leading us to scoop heaps of pasta onto our plates. Whether you are trying scallops or if you are a huge fan, this dish is a fun one to make in almost no time. With a dish so simple, date night can even happen on a random Tuesday!

Creamy Scallop Pancetta Pasta

Ingredients

  • 1 box Linguine
  • 1/4 cup Pancetta, diced
  • 1/2 cup Heavy Cream
  • 1/4 cup Parmesan Cheese
  • 1/4 cup Parsley, chopped
  • Salt and Pepper
  • 8-10 Scallops
  • 1 tablespoon Butter

Instructions

  1. Cook the linguine according to package instructions.
  2. While the pasta is cooking, crisp the pancetta in a pan for about 5 minutes. Add the heavy cream to the same pan and stir continuously to thicken. Cook for 3 minutes on medium heat and then stir in the Parmesan cheese. Once the cheese is fully melted remove from the heat.
  3. Drain the water from the pasta but keep a 1/4 cup of the pasta water. Place the linguine back into the pot and pour the pasta water and the cream and pancetta mixture into the pot with the pasta. Stir thoroughly and mix in the parsley. Season generously with salt and pepper.
  4. Rinse and dry the scallops and then season them generously with salt and pepper. Heat a pan with butter. Sear each scallop for four minutes on each side, until there is a golden sear. Place the scallops on pasta. Enjoy!
