Easy weeknight meals have become our specialty! With each of us having busy, full time jobs, we appreciate dinners that are incredibly fast to make. We are always brainstorming meals that are quick to meet our hectic weekdays. Along with this quickness, we must ensure that the meals we create are also completely easy. These creamy pesto pierogies were so effortless to make and were amazingly delicious! With just a bag of frozen pierogies, fresh parmesan cheese and a tomato, a fantastic, creamy meal was ready in minutes!

Before this meal, Dan had never eaten pierogies before. In case you have never had them either, pierogies are Eastern European dumplings that are frequently filled with savory ingredients. In grocery stores, they can be found filled with onions, potatoes and cheese. Although there are not a great deal of recipes that feature pierogies, we think that they should be used more often! When explaining pierogies to others, we tell them that they are similar to ravioli but with potato filling. Given that they are so versatile, we know that we will make more recipes with them soon. For now, these creamy pesto pierogies will be our go to quick and incredible dinner.

 The best thing about these creamy pesto pierogies is that they are a cheesy and satisfying delight. We loved how fresh they tasted even though they were a quick, frozen fix. Pairing them with a creamy sauce and tangy tomatoes, made the great flavors even better! With a tasty cheese top and a rich, potato filling, these pierogies will surely be a favorite in your house! Creamy Pesto Pierogies Skillet

Ingredients

  • 1 Container Pierogies, frozen
  • Olive Oil
  • 1 cup Milk
  • 1/4 cup Water
  • 2 tablespoons Butter
  • 1/4 cup Pesto
  • 1 cup Parmesan Cheese
  • 1 tomato, chopped
  • 1/4 cup Chives, chopped
  • Salt and Pepper

Instructions

  1. Cook pierogies according to package instructions. When finished, place in skillet with olive oil on medium low and sear both sides of each pierogi.
  2. Heat milk and water in a saucepan over medium heat for three minutes. Add butter, pesto sauce, garlic powder and salt. Reduce heat and continue to cook about 5 minutes. Stir in half of the Parmesan cheese.
  3. Pour the pesto on the pierogies in the skillet. Cook on medium low for about five minutes.
  4. Top with more cheese, tomatoes, chives, salt and pepper. Enjoy!
