Every once in a while we make a dish that makes us so surprised that we did not make it sooner. Usually these recipes are incredibly simple and include ingredients that we tend to have on hand. When we made this Chile relleno dip, we definitely were shocked that we hadn’t made it before. With just a quick browse of our pantry and a delicious and simple stove top sauce, this fun dip was ready in no time. After we tried this tasty dip, we knew it would be something we should make again for a gathering. Once we had a few bites, we were planning the next time that we could make and devour this delicious bean dip all over again.




Chile Relleno Dip

With the most creamy cheese topping, a layer of rich beans and spicy chiles, this chile relleno dip is so deliciously addicting. After we made it, we could not get enough of it! I even snuck a  few bites while photographing it, because I just could not wait! If you make this cheesy recipe, you will know exactly why it is so hard to wait to eat it!




Chile Relleno Dip

This recipe is part of our football game food posts. Each week, we choose two teams and create a dish that represents the team in some way. This week, we chose the Arizona Cardinals and the Seattle Seahawks. For the Seahawks, we discovered that people in Seattle take pretzels very seriously! After we found out that awesome fact, we had to make incredible pretzel bites to represent the Seahawks. When we researched what to make for the Cardinals, we unfortunately hit a few road blocks.







Given that I have visited Arizona several times when my grandmother lived there, I was able to draw some ideas from my experiences. Whenever we ate out in Arizona, I remember having really delicious and authentic Mexican food. Even though Mexican food in California is great, the Mexican food I enjoyed in Arizona had a really unique and awesome taste. One fantastic meal I recall having in Arizona, was the best chile relleno I have ever tasted. Drawing from that incredible meal, I decided to give it a game food spin and turn it into an amazing dip. After we wiped the skillet clean, we can declare that this dip is completely addicting and wonderfully good!

Chile Relleno Bean Dip

Chile Relleno Bean Dip

Ingredients

  • 1 can Refried Black Beans
  • 4 ounces 1/3 Less Fat Cream Cheese
  • 3/4 cup Pepper Jack Cheese, shredded
  • 1/4 cup Green Enchilada Sauce
  • 4 ounce can of Diced Green Chiles
  • 1/4 cup Cheddar Cheese, shredded

Instructions

  1. In a small skillet, spread black beans evenly on the bottom. Heat on low.
  2. In a saucepan, mix the cream cheese, pepper jack cheese and enchilada sauce. Mix until smooth and fully blended. Stir in the diced green chiles and save a spoonful for the topping.
  3. Layer the sauce on top of the refried beans. Heat unit the cheese bubbles (about 3-5 minutes). Garnish with more diced green chiles and cheddar cheese. Serve with tortilla chips and enjoy!
