After bringing you a fun pasta recipe yesterday, we thought we would keep our pasta theme rolling and bring you another fun and different idea. If we could, Dan and I would have pasta for dinner every single night. It is one of our favorite staples that we know never fails. In order to bring some uniqueness into our recipes, we love to experiment with different sauces, ingredients and types of pastas. Something we had not tried before but wanted to figure out, was how to make lasagna rollups. We both love lasagna, but the idea of individual lasagna bites got me brainstorming. Having an individual serving is great for leftovers, lunch the next day, and of course serving dinner to multiple people at once. As we pondered what to put in these savory lasagna rollups, classic and delicious ingredients were our first ideas. Before having our blog, I didn’t know how fun and creative cooking could be. It is a treat now if we repeat a meal in our house. The very best meals we make on here are the ones we get to eat again. Our grocery cart never looks the same anymore and we are constantly surprising and impressing ourselves. However, one staple that will always be found in our cart is pasta.

Chicken Spinach Alfredo Lasanga Rollups

Ingredients

  • 1 box Lasagna Noodles
  • 1 cup Milk
  • 1/4 cup Water
  • 2 tablespoons Butter
  • 1/4 cup Pesto
  • 1 tablespoon Garlic Powder
  • Salt and Pepper
  • 1 cup Rotisserie Chicken, shredded
  • 1 1/2 cups Mozzarella Cheese
  • 1 cup Frozen Spinach, thawed
  • 2 cups Alfredo Sauce
  • Parsley for garnish

Instructions

  1. Preheat the oven to 375 degrees. Boil lasagna noodles according to package instructions and set aside when finished cooking.
  2. Heat milk and water in a saucepan over medium heat for three minutes. Add butter, pesto sauce, garlic powder and salt. Reduce heat and continue to cook about 5 minutes. Stir in half of the Parmesan cheese.
  3. Place three noodles lengthwise in an oven safe dish. Scoop the creamy pesto sauce on each noodle. Layer each with an even amount of chicken, cheese and spinach, so that the entire noodle is covered in sauce, chicken, spinach and cheese. Roll the mixture and noodle into a pinwheel so that the filling is in the inside. Repeat this process until all of the noodles are used and the mixture is complete. The dish should fit about 12 rollups. Top with alfredo sauce and place in the oven for 20-25 minutes. Serve and enjoy!
