We hope everyone had a wonderful Easter! Ours was very sweet since it was our first Easter with our little nephew! Although he is too small to really understand the family fun, we loved passing him around and seeing him in his Easter finest. It was the perfect day with our family and we loved having little Zayne a part of it! With a bonus day of my spring break, I am loving the lazy morning to get things done. After a quiet morning with gardening and grocery shopping, I am so eager to show off our new recipes. Chicken Parmesan Zucchini Boats

This dinner was created after a few nights of pasta in a row. Now, we do really love pasta. However, a break with a creative twist was much needed after several noodle dinners. Substituting pasta for a delicious zucchini, was an incredible treat. We loved how it was perfectly stuffed with cheese, chicken and hearty sauce, creating for a super fun and healthy dish.

After we devoured each of these tasty stuffed zucchinis, we knew that we had a game changing recipe. All of our favorite chicken parmesan flavors mixed into one of our favorite vegetables, made for such a healthy and low fat meal. Chicken Parmesan Zucchini Boats

Ingredients

  • 4 Zucchini, sliced legthwise
  • 2 tablespoons Olive Oil
  • Salt and Pepper
  • 1 1/2 cups Rotisserie Chicken, shredded
  • 3/4 cup Mozzarella Cheese, shredded
  • 1/4 cup Parmesan Cheese, grated
  • 2 1/2 cups Marinara Sauce, jarred
  • 1/4 cup Basil Leaves, chopped

Instructions

  1. Preheat the oven to 350 degrees.
  2. After the zucchini is halved, cut a large rectangle in the center and scoop out the inside of the zucchini.
  3. Drizzle the zucchinis evenly with olive oil, salt and pepper. Bake in the oven for 10 minutes.
  4. While the zucchini is baking, mix together the rotisserie chicken, mozzarella cheese and the marinara sauce in a large bowl. When the zucchini is finished baking, scoop the chicken mixture evenly into each zucchini boat. Top with parmesan cheese and cook for another 15-20 minutes or until cheese is melted. Garnish with basil and enjoy!
