When life gives you no ideas for dinner, you dig in the pantry and make a tasty soup. After we threw together a soup, we were so happy with what our pantry had to offer. A few weeks ago on a cold night, we were desperate for something warm and did not want to eat out. After digging through our fridge and shelves, this delicious and easy chicken enchilada soup came to be. Once it all came together, we were amazed that this last minute dish was so incredibly tasty. With rich enchilada sauce, cheese and our favorite shortcut, rotisserie chicken, this soup will completely satisfy and amaze. When we made this chicken enchilada soup, it was a mistaken addition to our goal of reusing ingredients for several dishes. This week, we showed you our Mexican French Bread Pizza, and this dinner has several similar ingredients. Our goal this year is to combine recipe ingredients in ways that make different dinners, but have some of the same, tasty foods. Doing this not only saves money, but it also cuts down on food waste. We love how this plan has transformed our grocery shopping. Best of all, it allows you to have some of your favorite foods all over again. Ingredients

  • Olive Oil
  • 1 White Onion, diced
  • 2 tablespoons Garlic, minced
  • 1 16 oz. can Enchilada Sauce
  • 3 cups Chicken Broth
  • 1 Rotisserie Chicken, shredded
  • 1 10 oz. can Tomatoes, diced
  • 1 4 oz. can Green Chiles, chopped
  • 1/2 cup Shredded Cheddar Cheese, plus more for garnish
  • Salt and Pepper
  • For Garnish:
  • 1 Lime
  • Tortilla Chips
  • Cilantro
  • Cheddar Cheese
  • Chives
  • Greek Yogurt

Instructions

  1. In large pot on medium heat add oil and onion. Sauté for 4 minutes or until onions are translucent. Add in the garlic and stir.
  2. Pour in the chicken broth and enchilada sauce. Add in the chicken, tomatoes and green chiles. Bring the soup to a simmer and reduce the heat to medium-low. Add in the cheese and stir until melted. Season with salt and pepper and serve with garnishes. Enjoy!
