One of my favorite things is a home that is abounding with rich and aromatic flavors. Whether I walk into someone’s home or come into my own after a long day at work, the smells that cover me, give me a nostalgic feeling of delicious, home cooking. That is exactly what this Chicken Basque recipe did to our home. The minute I placed our Dutch oven on the stove and began pouring the ingredients into the pot, our entire home smelled of savory spices. As I sat back after preparations and let the chicken cook, the warm flavors escaping from the oven filled me with so much joy.

Another thing that brings me happiness is doing something successfully that I thought would fail. Usually when I cook more complex meals, I have Dan helping me with every step. He acts as my coach in the kitchen, encouraging and teaching me through the tricky parts. When I went to adapt this recipe, I thought of it as a fun challenge to complete on my own. As I began, the steps to complete by myself immediately intimidated me. However, as I coached myself through each uncomplicated step, I realized how easy and enjoyable this recipe actually was.

This Chicken Basque recipe reminds me of something that someone would make for me in his or her home in Italy. While we never had anyone prepare home cooking for us when we visited the country, this dish is something I could imagine someone pulling from the oven. Maybe it was because the aroma of our home somehow reminded me of Italy or because this is a dish I would love to eat while admiring the views of Tuscany. Whatever the case may be, this meal can transform your home with amazing aromas and flavors.

When making Chicken Basque, various fresh vegetables could be added to modify the flavors. Bell peppers, carrots or asparagus would be wonderful additions to this dish. It would also be delicious paired with wild rice or served alone. However you wish to enjoy this incredible chicken dish, be prepared for overwhelmingly delicious smells, pouring from your kitchen. Chicken Basque

Ingredients

  • 6 Boneless, Skinless Chicken Thighs
  • Salt And Pepper
  • 12 teaspoons Paprika
  • ½ cups Flour
  • ¼ cups Olive Oil
  • ½ White Onion, Diced
  • 2 cloves Garlic, Crushed
  • ½ cups Sherry Vinegar
  • 3 cups Chicken Broth
  • 1 cup Artichoke Hearts
  • 1 cup Cherry Tomatoes
  • ½ cups Kalamata Olives
  • ½ cups Green Olives

Instructions

  1. Preheat the oven to 350 degrees. After cleaning the chicken thighs, coat them generously with salt, pepper and paprika. Once seasoned, drop them into flour and coat.
  2. On the stove in a Dutch oven or a pot that can be transferred to a Pyrex, heat oil on medium heat. Add three of the thighs and brown for 5 minutes on each side. Once complete, remove the three thighs, and brown the remaining ones. Place on a dish and let sit while preparing the stew.
  3. Add the onion and garlic to the same pot and cook for three to four minutes. Pour in the vinegar and stir well. Add the broth, artichokes, tomatoes and olives. Cook for five minutes and place the chicken back into the pot.
  4. Once the ingredients are brought to a boil, cover the dish (or place in a Pyrex) and place it in the oven. Bake the mixture for 1 hour. Enjoy!
