For all of you families going back to school, here is an incredibly delicious meal that can be enjoyed during the busy rush. We know that satisfying and tasty meals that can go the extra mile are important during hectic times. When the busyness sets in, fast meals that provide ample, flavorful leftovers are a must. Given that I also went back to school last week, I was in need of a meal that was good enough to enjoy again and again. Never before had I made lasagna, but the idea of a classic staple that I could eat for days seemed like a welcomed challenge. This cheesy tomato lasagna was such a fantastic dinner that I loved devouring as leftovers day after day at work. With just a few minutes of prep and many tasty meals later, this lasagna was the perfect bake for successfully getting back into the swing of school.




Even though lasagna seems like a difficult task, it is one of the simplest dishes I have ever made. If you have ever made lasagna before, you probably will agree with that previous statement. However, if you have not, you are most likely intimidated by the idea of crafting a delicious tower of noodles and cheese. I know I sure was! Before making lasagna, I was anxious about all of the ‘complicated’ layers that went into it. The thing about layering is that it is very forgiving and almost effortless. When everything is prepped and ready to be poured into the baking dish, the layering aspect is probably the easiest thing – and of course the most fun. Piling on the parts that I love the most (cheese!) made this process deliciously customizable. We loved how everything layered on perfectly to create a simple and irresistible dinner that I looked forward to every day for lunch.







Easily, the best part of this cheesy tomato lasagna was the incredible, crispy toppings. Even though summer is sadly ending, we wanted to highlight some of its amazing flavors in this back to school staple. With gorgeous, garden-ripe tomatoes and fresh basil, this lasagna looked and tasted like a dream! Adding Ritz crackers to the top gave it the salty crunch that it needed underneath a mound of wonderful, oozing cheese. Whether or not you are in a hurry this month, I urge you to try this perfect cheesy tomato lasagna. It was a fast fix that was enjoyed for many days. Even if your family eats it in one sitting, it is a recipe that everyone will want you to (quickly and easily) make again! We promise not to tell anyone how completely simple this amazing lasagna really was!

Cheesy Tomato Lasagna

Cheesy Tomato Lasagna

Ingredients

  • 1/2 box Oven Ready Lasagna Noodles
  • 1 Jar Marinara Sauce
  • 3 cups Mozzarella Cheese, shredded
  • 1 Egg, lightly beaten
  • 1 pound Ground Pork Sausage
  • 1 1/2 cups Ricotta Cheese
  • 1/2 cup Parmesan Cheese
  • 2 Tomatoes, sliced
  • 1/2 cup Fresh Basil
  • 1/4 cup Ritz Crackers, crumbled
  • Salt and Pepper

Instructions

  1. Preheat oven to 375 degrees. Cook noodles according to package instructions and set aside.
  2. In a large saucepan, add cook the pork sausage. In a bowl, combine and eggs and ricotta cheese.
  3. Grease a baking dish and cover the bottom with marinara sauce. Begin layering the lasagna with noodles, then sauce, followed by the sausage and then mozzarella. Repeat that process until the noodles reach the top.
  4. On the last layer, begin with sauce and then finish by adding the remaining mozzarella, tomatoes, basil, Ritz crackers, salt, pepper and Parmesan cheese.
  5. Cover with foil and bake for 30 minutes. Remove the foil and cook for another 10 minutes, until cheese is melted and the toppings are golden brown. Serve and enjoy!
