We are at it again to bring you another game day recipe that represents an NFL team! This week, we are focusing on Saturday’s game between the Miami Dolphins and the Los Angeles Chargers. As stated in pervious posts, we will be featuring two teams each week and creating recipes that represent the team based on traditions, flavors and regions. Following this battle, we will chose a winning dish that will predict the winner of the game. When we make these foods each week, we are able to enjoy the tastes of different areas and then savor these flavors while watching Dan’s favorite pastime. Adding themed game day food to our football watching routine has been a fun weekend addition. This week, as we focused on the Miami Dolphins, we were so excited to create these simple and cheesy beef empanadas. After we devoured each of these amazing pastries, we were so delighted by the incredible tastes we experienced. Not only were these empanadas full of fantastic tastes, but they were also so effortless to make while using great short-cuts.




 

When we research foods that are loved and celebrated in Miami, empanadas popped up all over our searches. As we looked at different variations, we discovered that restaurants all over Miami use varied ingredients to create these tasty pastries. Crescent-shaped and full of savory beef and veggies, empanadas are a wonderful Miami staple. Filled with every variation of meat and veggies, empanadas are to Miami as deep dish pizza is to Chicago and bagels are to New York City. Packed with beef, peppers, spices and cheese, these empanadas we made for game day are full of the best and most delicious flavors.

Given the recent devastations that have happened to Florida this week, we were hesitant to feature this recipe and highlight Miami. However, we want to use this opportunity to share our sympathies. Dan and I have been thinking and praying about Florida and those affected, as well as those who are reeling from the devastation in Houston. These cheesy beef empanadas are so easy and can be made in no time. Using the short-cut of pre-made crescent rolls, these empanadas are a great game day treat! Once you make and try them, I am sure that you will be compelled to create them again and again.

Cheesy Beef Empanadas

Ingredients

  • 16 oz. Crescent Roll Dough
  • 2 tablespoons Olive Oil
  • 1 Red Bell Pepper, chopped
  • 1 Green Bell Pepper, chopped
  • 1 Yellow Onion, chopped
  • 1 lb. Ground Beef
  • 2 tablespoons Paprika
  • 1/2 teaspoon Chili Powder
  • 1/2 cup Cilantro, chopped
  • 1/2 tablespoon Salt
  • 1/2 tablespoon Pepper
  • 1/2 cup Cheddar Cheese, shredded

Instructions

  1. On a floured surface, roll out the dough and begin cutting circles using a cookie cutter or the mouth of a cup. Place cut dough on a greased baking sheet and set aside.
  2. In a pan, sauté bell peppers and onions in olive oil. Add the ground beef until browned. Mix in paprika, chili powder, cilantro, salt and pepper. Stir in cheddar cheese until melted.
  3. In the center of each circle of dough, place two spoonfuls of beef mixture. Fold the dough over to meet the other side and close the edge with a fork.
  4. Bake in the oven for 10 minutes at 375 degrees. Enjoy!
