If you have never heard of or tried totchos before, then listen up! This tasty, cheesy and fun appetizer is an improved version of the classic nachos. Substituting tortilla chips for tater tots, this exciting dish is even more delicious than everyday nachos. When tater tots meet a layered, cheese filled appetizer, the most exciting dish is born. These cheesy bacon and avocado totchos were bursting with amazing flavors, and were the perfect appetizer to enjoy outside with friends in this warm weather.

When we first made totchos for a football game last year, we were happily surprised by the great tastes. We knew that tater tots as a base for nachos would be fantastic. However, after a few bites, we were blown away by how fantastic they truly were. Tater tots were something I really only ate as a kid when they were served in the cafeteria. I never ate them as an adult because they seemed like a food that could only be served in a school lunchroom. However, when I saw a photo of tots layered with cheese and exciting toppings, I knew that tots could be a delicious choice.

The greatest thing about totchos is that they are super versatile. They could be dressed with any meat or cheese with fun toppings, and another incredible tater tot nacho could be deliciously made. After making these cheesy bacon and avocado totchos, my mind is filled with more amazing recipes to feature this tiny, fried potato. With so many options, I know that we will be making a creative combination of totchos very soon.

These cheesy bacon and avocado totchos were so very simple to make and could be enjoyed in so many different ways. Outside with cocktails enjoying time with friends, or on the couch in front of a game, these totchos would be a fun addition to any gathering. I can even picture kids devouring these during a family game night. However these totchos are enjoyed, we dare you to try to make them very soon. With melted, cheesy sauce and a rich guacamole topping, these bacon and avocado totchos we so flavorful and fun. Cheesy Bacon and Avocado Totchos

Ingredients

    For the Totchos
  • 1 bag Tater Tots, frozen
  • 1 Tomato, chopped
  • 1/4 cup Cilantro, chopped
  • 1/4 cup Black Beans
  • 3 strips Bacon, chopped
  • For the Guacamole
  • 1 Avocado
  • 1 Lime
  • Salt and Pepper
  • For the Cheese Sauce
  • Salt and Pepper
  • 2 tablespoons Butter
  • 1 ½ cups Milk
  • 1/4 cup Flour
  • ¾ cup Parmesan Cheese, grated
  • ¾ cup Cheddar Cheese, grated

Instructions

    For the Totchos
  1. Cook tater tots according to the bag instructions.
  2. Cook bacon in a skillet to desired crispness. Drain on paper towels and set aside.
  3. For the Cheese Sauce
  4. In a medium saucepan, melt butter on low heat. Add milk and slowly whisk in flour. Whisk continuously while slowly pouring in the cheese. Continue whisking until the mixture is thick and fully melted. Generously season the cheese sauce with salt and pepper. Remove from heat.
  5. For the Guacamole
  6. Mix avocado and lime juice in a small bowl until smooth and blended. Season with salt and pepper.
  7. For the Garnish
  8. Pour cheese on top of the cooked tots. Layer with tomatoes, cilantro, black beans, bacon and guacamole. Enjoy!
