To say that Dan and I are obsessed with meatballs is an understatement. Any time we have no idea what to make, meatballs are one of the first things we suggest. While meatballs are our usual suspects, we always try to make them unique. Stuffing them with cheese this time was one way of definitely making them deliciously unique.

Easy Meatball Sub




This recipe is a part of our weekly football food posts. Each week, we choose two teams to create recipes for and pick a winning dish. These recipes represent the team in some way, whether it is for the city, the state or for the team itself. We love researching what is popular in a certain region and getting creative about how to highlight the team. This week, we chose the Buffalo Bills and the New York Jets. With two New York teams, we felt a little in over our heads. Given that neither of us have visited the area, we were worried about coming up with two dishes in one week to represent one distinct place. Once we narrowed down some ideas and were set on bringing meatballs into the equation, great recipes started flowing.




Meatballs and New York go together somehow for us, and when the idea came at us, we hungrily went with it. Great Italian food seems to be produced in that area, so naturally a cheese stuffed meatball was the way to go for this recipe. Placing the cheese stuffed meatballs into a sourdough bun, then made this dish a real game changer.

Our other game day food to represent the Buffalo Bills was our buffalo macaroni bites. When we had the two go head to head, we were able to chose a winner. While both were delicious and brimming with flavor and cheese, we chose the buffalo macaroni bites. There was something so incredible about every bit of those tasty bites, that we had to go with that inventive and fun idea. Fingers crossed that the Bills win tonight and give us another win for our football food predictions!

Easy Meatball Sub Sandwich

Easy Meatball Sub Sandwich

Ingredients

  • 1 pound Lean Ground Beef
  • 1 pound Ground Pork
  • 2 Eggs
  • 1-½ cup Italian Blend Breadcrumbs
  • 2 Tablespoons Salt And Pepper
  • 2 Tablespoons Italian Seasoning
  • 1 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Olive Oil
  • ¼ cups Ketchup
  • 1 package Cherry Sized Mozzarella
  • 4 Sourdough Buns
  • 1 cup Marinara Sauce
  • 1/4 cup Parsley, chopped

Instructions

  1. In a large mixing bowl, add beef and pork and combine with hands. Once mixed, add the two eggs and continue to knead the mixture with hands. While continuing to mix, add the breadcrumbs, salt and pepper, Italian seasoning, Worcestershire sauce, olive oil and ketchup.
  2. Once all ingredients are combined, begin forming the meatballs. Grab a medium-sized mixture of the meat and loosely roll a ball. Take a ball of mozzarella and place it in the center of the meatball, packing the meat around the mozzarella. Do not firmly pack the meatballs. The meatballs can vary in shape and size.
  3. Place each of the meatballs in a large, greased Pyrex dish and place in the oven at 375 degrees for about 25-28 minutes. If the meatballs are smaller, cook closer to 22-25 minutes, and if they are larger, cook closer to 28-30 minutes.
  4. When finished, place in a sourdough roll and pour marinara sauce on top. Garnish with parsley. Enjoy!
