Easter is right around the corner and we are extremely excited for it to arrive! Looking at these drool-worthy pictures of this easy Easter bunny Bundt cake, I become so eager for Easter. I can imagine an eight year old me developing the biggest eyes and grin if my mom were to put this cake on the table for Easter. The sweet bunnies, the fluffly powdered sugar and the dripping chocolate, would easily have me bouncing up and down in my Easter dress. I am positive that any child on Easter would have a similar reaction when this bunny cake emerges from the kitchen.

Dan and I have so many found memories of Easter. Both of us remember getting dressed up in a fancy outfit for Easter service. I would go shopping with my mom each year, and pick out the most poufy, floral dress I could find. After church, we would both gather with family and have an egg hunt. I can recall counting down the days until the Easter bunny would come! My sisters and I would get so wrapped up in the idea of spotting him outside. Along with the meaning of Easter, we love how we get to be with family and celebrate together. Easter means so much to us and we are so lucky to be able to spend it with our great families. To me, this adorable cake represents all of the excitement and anticipation that I felt as a young child before Easter. Making it this week brought back so many memories about this holiday.

My favorite thing about this easy Easter bunny Bundt cake is that it actually is quite easy! For someone who is horrible at decorating baked goods (me), this one is fool proof! After drizzling on the melted chocolate, all that is left is putting the cute Annie’s Organic graham cracker bunnies around the rim. It cannot get any simpler! Additionally, if you follow our blog, you know that I am awful at baking. I mean awful. Someday I should do a post highlighting all of my epic baking fails. I would have people laughing in hysterics. This time however, the cake was easy enough for me to master! If I can make it and it is delicious, then anyone can do the same!

Easy Easter Bunny Bundt Cake

Ingredients

  • 8 ounces Butter, unsalted
  • 2 1/2 cups Flour
  • 1/2 cup Cocoa Powder, unsweetened
  • 1 teaspoon Baking Soda
  • 3/4 teaspoon Salt
  • 1/2 cup Milk
  • 1/2 cup Sour Cream
  • 1 1/2 cups Sugar
  • 4 Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Walnuts, chopped (optional)
  • For the Glaze
  • 1 Container Chocolate Frosting, melted
  • 8 -10 Annie's Homegrown Organic Honey Graham Rabbit Crackers

Instructions

  1. Preheat oven to 325 degrees. Butter a bundt pan. We used two small bundt pans, but this recipe can also be used for one large pan. In a large bowl, mix flour, cocoa, baking soda, and salt, whisking constantly. In a small bowl, add milk and sour cream.
  2. With an electric mixer or mixing stand, beat the butter and sugar on medium speed for about five minutes. With the mixer on low, add each egg one at a time. Add vanilla and walnuts and reduce the speed to low. Add the flour one cup at a time. After each cup of flour, pour in a half a cup of the milk mixture. Mix until fully combined.
  3. Pour the batter into the pan. Bake for 55 minutes and check for completeness with a toothpick. Transfer cake to a wire rack to cool.
  4. When completely cool, pour the frosting evenly over the cake letting it drip. Add the rabbit crackers to the cake, around the rim. Enjoy!
