Dan and I are always looking for meals that are easy and fast to make after work. When he suggested twice baked potatoes a few weeks ago, I was skeptical about it checking all of my dinner-time boxes. As I recipe plan each week, I think of meals that have to be fast, easy and full of amazing flavors. The minute Dan told me he thought twice baked potatoes could be ready under thirty minutes, I told him it could definitely not be done. After I bought the ingredients to see if it could be completed in his suspected time, I tried to think of ways to make the process faster. In a quick Google search, I discovered that I could easily ‘bake’ potatoes in the microwave. Once I saved thirty minutes by microwaving the potatoes instead of baking them, Dan’s crazy notion seemed not so crazy! These buffalo twice baked potatoes proved that twice baked potatoes can be made and deliciously enjoyed in almost no time at all!

Twice baked potatoes are one of my favorite guilty-pleasure meals. As a kid, our family only ate them once a year. Every Easter, my mom would work so hard in the kitchen, twice baking her potatoes to perfection. I loved taste testing the potato mixture, making sure it was zesty, creamy and salty enough to my liking. Each year, I looked forward to eating those fantastic potatoes and having the leftovers for lunch, dinner and even sometimes breakfast.

When I first tried to make twice baked potatoes on my own when Dan and I first got married, they took me forever to make. This could have possibly been because I was always so used to tasting the potatoes instead of truly helping my mom. However, when I first attempted them, I was shocked with how long and hard the process really was. When I decided to microwave the potatoes this time, every little step seemed so much easier. Everything simply fell into place. This short-cut, along with the short-cut to purchase already cooked bacon and grilled chicken, made these twice baked potatoes a true breeze.

Buffalo Twice Baked Potatoes

Buffalo Twice Baked Potatoes

Ingredients

  • 3 Potatoes
  • 1 tablespoon Olive Oil
  • 2 tablespoons Milk
  • 1 1/2 tablespoons Butter
  • 1 cup Sour Cream
  • 1 cup Sharp Cheddar Cheese, shredded
  • 1 tablespoon Garlic Salt
  • 1/2 cup Buffalo Sauce, separated
  • Salt and pepper
  • 3 slices Bacon, cooked and chopped
  • 1/4 cup Green Onion, chopped
  • 1/2 cup Grilled Chicken, cooked and chopped (we purchased ours from the deli)
  • 1/4 cup Blue Cheese, crumbled

Instructions

  1. Preheat the oven to 350 degrees.
  2. Wash the potatoes and pierce them with a fork. Rub the potatoes with the olive oil and place them on a microwavable plate. Cook on high for 5 minutes in the microwave, flip and then cook for another five minutes. When the potatoes are cool, cut them in half lengthwise and scoop out the potato, leaving the skins intact. Add the potato insides to a mixing bowl.
  3. In the same mixing bowl, add the milk, butter, sour cream, cheddar cheese, garlic salt, 1/4 cup of the buffalo sauce, and salt and pepper to taste. Mix thoroughly. Evenly add the potato mixture back into the potato skins. Place the potatoes in the oven for 15 minutes. Remove from the oven and garnish with the bacon, green onion, grilled chicken, blue cheese and remaining buffalo sauce. Enjoy!
