Broccolini Pomodoro

Ingredients

  • 1 bunch Broccolini
  • 1 box Rigatoni Pasta
  • 3 tablespoons Olive Oil
  • 1 White Onion, chopped
  • 2 tablespoons Garlic, minced
  • 1/2 teaspoon Crushed Red Pepper Flakes
  • 1 28-ounce can San Marzano Whole Peeled Tomatoes
  • Salt and Pepper
  • 2 Basil Leaves, chopped
  • 1/4 cup Parmesan Cheese, grated

Instructions

  1. Steam the broccolini until soft. Set aside.
  2. Boil the pasta according to the package instructions. Drain and set aside when fully cooked.
  3. In a skillet, heat the olive oil on medium heat. Add the onion, garlic and red pepper flakes. Pulse the can of tomatoes in a food processor for 30 seconds. The tomatoes do not need to be perfectly smooth, and lumps can remain. Add the tomatoes to the skillet and season with salt and pepper. Let cook for 10 minutes and bring to a simmer.
  4. Pour the pasta into the tomato mixture. Place the broccolini into the skillet. Heat for 5-8 minutes, top with Parmesan cheese and basil leaves. Serve and enjoy!
